    Soup of the week – leek and veg

    ·        F - Takeaway or freezer rake

    ·        Sa- Braised steak, spuds and veg

    ·        Su – Pork ribs, corn, mushrooms, toms, HM wedges

    ·        M  – Yoghurt chicken, rice and naan 

    ·        Tu – Sausage and red pepper hotpot, green veg

    ·        W – Pasta with chorizo, tom sauce and pesto

    ·        Th –  Tbc poss chicken casserole

    Next week for me, is as follows:

    Lemon and Courgette pasta
    Curry, chips and naan
    Pizza and salad
    Cauli alfredo
    Satay and rice
    "Chicken" burger with corn on the cob
    Mushroom risotto 

    The only thing not eaten last week was pizza and mushroom risotto changed to this week. I won't lie, but I will probably refrain from eating risotto from the freezer again, as I never enjoy it. 

    This is the menu plan that I've followed this week. I've been keeping it very simple, and trying to stay out of the shops. However, I will have to replenish some bits tomorrow. Then I'm hoping not to buy until shopping is delivered on the 13th.

    My poorly friend has gone home leaving me with chicken potatoes and orange jelly to use up.  So:

    roast chicken, Mediterranean veg, spinach, crushed roast potatoes, pineapple, kefir
    Chicken curry, stir fried spicy green beans and sauté potatoes, raspberries and blueberries, kefir x2
    roast chicken, green beans, spinach, crushed roast potatoes, jelly and canned mandarin oranges, kefir
    chicken and veg risotto, jelly and canned mandarin oranges, kefir
    spinach and ricotta lasagne, raspberries, blueberries, kefir

    This week's meal plan:

    Today (Sat) - Hm tomato & red pepper soup, sandwich, chocolate sponge with chocolate sauce
    Sun - Chicken casserole, mash, sprouts
    Mon - Jambalaya (to use up the rest of the chicken, a couple of slices of cooked gammon and a red pepper)
    Tue - Egg & chips, curry sauce
    Wed - Scampi & side salad
    Thu - Cornish pasty, peas, potatoes
    Fri - Sea bass

    I'll be using the chicken stock to make a minestrone type soup for a couple of lunches and making some sausage rolls to freeze for Xmas.  Other than that, no batch cooking or baking this week as freezer stocks need to be run down a bit.
    Be kind to others and to yourself too.
  • Out a couple of days this week so not too much planning or shopping. Here’s the plan:

    Sat - salmon, braised lentils, sugar snap peas 
    Sun - cheese and biscuits or pate (out for lunch)
    Mon - spicy sesame mushroom spaghetti, broccoli 
    Tues - beans on toast 
    Wed - beef stew (from freezer), crusty bread, broccoli 
    Thurs - egg on toast (out for lunch 😉)
    Fri - chorizo, chickpea and spinach stew

    Well things haven't gone to plan for me. Friday night I ended up having something else, I can't even remember what now. 
    My children came on Saturday so we ended up having a late mini buffet, as I missed granddaughter's birthday, as she was unwell. This just continued into the night as nobody wanted a 'real' meal. The cauliflower alfredo was what DD2 requested, but she ended up forgetting she had even asked for it. Just aswell, as It was still in the freezer 😁
    So as always, my meal plan is a bit all over the place again 🤭
    Tonight, I will use up the tofu I was meant to have on Friday, and possibly revisit the Jerk meals

    Only got back from holiday on Thursday night so only just got round to meal planning after raiding the freezer and cupboards for meals Friday and Saturday before shopping.

    This week's meals should be:

    S - roast chicken dinner
    M - shepherds pie, veg (using savoury mince from freezer)
    T - LO chicken, chips, baked beans
    W - Spanish rice using small bits of chicken from roast plus some chorizo from freezer
    T - Beef stew, mash (beef from freezer)
    F - Hunters chicken, mash, veg
    S - Possibly eating out with friend but if not I'll make a chana masala from cupboard ingredents
