    Lots of changes due to hospital appointments for both DH and I.  He's got an appointment at a hospital over an hour away at 5.45pm so it will be too late to eat when we get home so have decided to eat out tonight.
     
    I'd already swapped Friday and Wednesday's meals so last night we had the beef and courgette koftas; tonight we'll eat out; Friday will now be faggots and Saturday will be beef and barley stew.

    The hunters chicken meatloaf will end up on next month's plan some time!  As we were going to be having LOs for lunch the following day we'll now have jacket potato with baked beans tomorrow.

    Could you please share your chasni recipe? It sounds delicious. I can sub the chicken for cauliflower or something else. Thanks. 
    It's a Dan Toombs recipe, it's a bit of a faff as you need base curry sauce but DS2 makes the base in large batches then freezes in 1 cup amounts. We don't add the food colouring.     I googled it, but didn't get what he meant by the base curry. I am guessing he has a recipe for that.

    I shall be out to lunch at least one day in the week, so just 6 main meals to find.

    This week’s soup will be ham and lentil.
    sardines with a Greekish salad x2
    Pasta puttanesca x2
    tuna anchovy pasta x2

    not too sure about desserts - I have enough fresh fruit for 3 or maybe 4 days so maybe will just make something simple like jelly and canned fruit or a trifle for the other days - that way I won’t need to go shopping and deal with the temptation to buy stuff.
  • Nearly forgot to post. Stuck to the plan last week and enjoyed the soup for two days lunches 😋. All planned and shopped for the coming week which looks like:

    Sat - grilled salmon with creamy leeks and cannellini beans (was yummy)
    Sun - smoked salmon sandwich (out for lunch)
    Mon - creamy sausage and leek pasta, green veg 
    Tues - beans on toast 
    Wed - lamb, chickpea and spinach curry, pitta bread 
    Thurs - chorizo rice with soft boiled egg 
    Fri - harissa prawn and courgette orzo 

    Will make spicy carrot and lentil soup for couple of days lunches 🙃

    Another week gone!  More or less stuck to plan.  This coming week is only until Wednesday as off on holiday from Thursday.

    S - sausage cassoulet
    M - LO faggots, mash, veg
    T - butter chicken, rice
    W - Chippie supper

  • Me meal plan and shopping all sorted for this week.

    Today - Italian chicken, salad and jacket spud.

    Sun - stuffed lamb breast, roast potatoes, roast carrots and green beans.  The lamb breast was from the farm shop and I’ve never cooked this before, so any cooking tips welcome.

    Mon - Chinese chicken stir fry with egg fried rice.

    Tue - Sausage, Mash, onion gravy and peas

    Wed - gammon,egg, chips and peas

    Thu - Spanish chicken and chorizo with orzo

    Fri - pancetta wrapped cod loin, baby new potatoes and leeks in a cheese sauce.

    @Mrs_Motivated i too have a lamb breast, currently in the freezer, but due to be added to next week’s meal plan.  I am quite sure my mum used to roast lamb breast but when I’ve googled all the recipes are for casseroling it.

    Not had stuffed lamb breast for a long time but when we first married I used to bone the breast myself and stuff it.  I always roasted it but think it's best to do it on a rack as it's a very fatty joint.  IIRC I used to cook it for the same length of time as the potatoes - just put it in the tin surrounded by potatoes.  I don't eat it now as I do Slimming World and it's just too fatty but a lovely joint.
