So here's what we’ve eaten so far this week and what’s coming up on our cooking plan:
Eaten
- Miso, ginger, garlic, and lime roasted chicken. It’s an Ottolenghi recipe that uses chicken thighs but I just applied the same spices to a whole chicken. It came out excellent. We still have some of that in the fridge. - Chinese vegetable soup made by OH. After we roasted the chicken, we added some to the soup to the extend it.
- Spinach, mushrooms, truffle sauce, cheddar and mozzarella tart last night. It used frozen spinach, frozen mushrooms, and a short pastry out of the freezer. Also the remainder of a jar of truffle pasta sauce that’s been in the fridge a while.
Cooking Soon
- Small lamb shanks - just pulled these out of the freezer for tomorrow’s dinner. Instead of stewing them in the cast iron pot, I think I might shallow braise them. Anybody have any favourite recipes or ideas? Would they be good with peppers braised along with them?
- Chicken & couscous salad - Using the leftover roasted chicken and adding some vegetables into the mix. OH would be able to take this for his work lunch since there’s no microwave there.
- Maybe a frittata - lots of kale, peppers and cheese all up in there.

joedenise said:@K9sandFelines - I'd definitely say it's a good thing that a lot of meals are staying in the freezer and you are using up LOs rather than taking something out of the freezer and putting the LOs in. If you don't mind eating the same things I think it's far better to eat your LOs than freeze them for another day.

Another week over and mainly stuck to plan although days swapped about a bit! This week's plan:
S - gammon steak, new potatoes, corn on the cob, mushrooms
M - mushroom stroganoff, rice
T - 5 spiced pork fillet, rice, green veg (will freeze half)
W - HM faggots, mash, veg (will make double and freeze half)
T - Hunters chicken meatloaf, mash, veg (LOs will be lunch the following day)
F - beef and courgette koftas, rice, salad, yoghurt and mint dressing
S - Beef and barley stew, mash (from freezer

@joedenise - hm faggots? Recipe please! I used to like them from the butcher when I was young but every time I’ve seen them for sale in a supermarket they turn out to be rather greasy and nasty. I’d love to have a go at making them.3

@bouicca21 - it's a recipe a friend at Slimming World gave me so not sure how authentic it is but we like them!
500g 5% pork mince
250g lambs liver
2 medium onions
3 Rye crispbreads
1 tsp sage
1 tsp thyme
half tsp salt
1 tsp pepper
2 beef stock cubes (crumbled)
egg to bind if necessary (but I don't usually find I need it)
Blitz the onion and crisp breads in a food processor until finely chopped. Add the rest of the ingredients and blitz again.
Spray a frying pan and add spoonfuls of the mixture to the pan and brown both sides. Don't try to roll them into balls as the mixture is very sticky!
Place all the faggots into a baking tin and cover with onion gravy (HM preferred but can use granules) and bake in oven for about 30 minutes. I cook them at 190 degrees in a fan oven.
You need the low fat mince so that they don't become greasy - I suspect that's why they're greasy from the SW. I really don't like the texture of the branded ones at all!

Bit of a busy week here with a few after work appointments and a friend coming to stay at the weekend:
M - Nacho-style feast (or Mexican Fiesta as DH like to call it)
T - Pea and Prawn risotto but may be subject to change
W - Chicken dhal and rice (using leftover chicken from a roast yesterday)
T - LO pea and prawn risotto

S - Out for a roast and then cheese and crackers in the evening if people are hungry

Tues - tuna steak, ginger sweet potato mash, sugar snap peas
Wed - lamb, chickpea and spinach curry, flatbread
Thurs - Thai pork curry, noodles, sugar snap peas
Fri - chilli prawn and tomato linguine, broccoli
Have made celery and Stilton soup this afternoon for lunches 😋4 -

So my week has been dipping my toe into The Starch Solution way of eating. I am not fully there yet, as I do like my coffee and tea and vegan butter on my bread; but the rest I am trying to be compliant with. Once I've got the hang of it, I will go fully compliant and wean myself off of these things.
So far I've had:
Monday: Spicy Asian noodles ((McDougall website), with sprouts. This was delicious!!
Tuesday: Freezer rake Goan curry and air fried chips
Yesterday : Crockpot Pizza potatoes (Mcdougall website). Wasn't keen (think less sauce would have been better, but didn't want it drying out as the potatoes were pre cooked)
Tonight : very basic. I will have some form of rice with air fried courgettes (coated in nutritional yeast) and broccoli
Friday : Meatballs and pasta (DD2 here. This isn't SS compliant)
Saturday : possible chicken burger (also not SS compliant)
Sunday: if I can get hold of some yellow mung dal, I will try and replicate Just Egg, served with homemade hash brown (just grated potato) and tomatoes, mushrooms, spinach.
