I’ve had a Google for recipes too and think I will go for slow roast, I saw all the casserole type recipes too but as it’s a fatty cut of meat I don’t fancy it casseroled and I’m hoping the fat will render down better if I roast it.

I did casserole one last year in my slow cooker - had to leave it overnight so that the fat could set enough to remove it and then reheat.
I think I’ll have a go at the slow roast - I’m sure I can think of other things to cook at the same time in order to ensure best use of the oven.3 -
This week's meal plan:
Mon - Pasta meal (tuna, mushrooms & peppers in white wine sauce)
Tue - Salad (probably pilchards) though this may change, weather dependent!
Wed - Fish fingers, peas & saute potatoes
Thu - Gammon, egg, chips
Fri - Battered cod
Sat - Chicken korma, small side of rice, naans
Sun - Lamb (from freezer), mash, carrots & swede
Last week's planned mini vanilla cheesecakes for Xmas didn't happen as there's not enough room in the freezer yet so have parked that job for another week. Soup of the week will be parsnip & apple. Any puddings this week will be fruit based - maybe apple crumble or fruit & jelly. Either one means I can use up that last bit of ice cream that's lingering in the freezer.Be kind to others and to yourself too.4 -

Meatballs will live to see another day, as they are a new pack!
I've wrote down everything in freezer to do next week's meal plan, and courgettes are prepped and ready for Monday 💪🏻. Tomorrow will be Bourgignon which is in the fridge.
I also made bread yesterday (not very starch solution friendly, but thought I was going to need it for granddaughter (I will now freeze half, or I will just keep eating it); and minestrone soup today.
The battle to empty the freezer goes on 😂

Stuck to plan last week, hurrah!
I’ve got 4 portions of soup in the freezer so won’t make any more this week but I am going to do some smoked mackerel pate. Out Friday evening (probably some kind of junk/street food 😉) and for lunch next Saturday - it’s that time of year. So, the plan from today is:
Sat - tuna steak, tomato and pepper stew, chips 😋
Sun - beef stew, mash, green beans
Mon - LO stew and mash, green beans
Tues - beans on toast
Wed - pork egg fried rice
Thurs - harissa and courgette orzo with feta and roasted cherry tomatoesHave a good week, everyone.4
