I always find this thread inspiring @mrs_motivated, sometimes makes me want to rip my meal plan up and start again 😂
This week we're having:
M - Curried Sausage tray bake
T - Mushroom Risotto
W - Chicken pasta bake
T - Mushroom Risotto leftovers
F - Jacket Potatoes
S - Veggie goulash and rice
The veggie goulash is already in the freezer so that's an easy meal to have (and stops DH suggesting we go out somewhere...)
Lunches this week are mostly leftover soup from last week (vegan "chicken" pot pie, which is actually amazing!) and some eggs on toast when I feel the need for a change. Should have an empty shelf in the freezer by the end of the week so I can start getting Christmas stuff this weekend 🤞

- Soup of the week - HM tomato soup
- F - Takeaway or freezer rake
- Sa- Southern Fried chicken, corn, coleslaw, onion rings and oven chips
- Su - Duck breasts, veg, spuds and gravy
- M - Sweet & sour pork, veg and rice
- Tu - HM frikadellar, baked spuds, cabbage, carrots and cream gravy
- W - Tbc as out for lunch
- Th - Eggs, beans, mushrooms and waffles

I had leftover Bourgignon last week on Monday and had split Pea soup aswell, so I won't be having the Bourgignon again this weekend. Today I've had Burrito bowl using sweet potatoes I'd cooked, and more Spanish omelette (I'd definitely make it smaller next time).
Tomorrow, I'm unsure what I'll have, just keep ploughing through what's already prepped or needs using up I think. Saturday my DD2 is here so we will have Cajun tofu and pasta. So four meals haven't been eaten, so things aren't moving very fast. I suppose this is a good thing right!? Sunday is also yet to be confirmed. Probably leftovers or a freezer rake!

@K9sandFelines - I'd definitely say it's a good thing that a lot of meals are staying in the freezer and you are using up LOs rather than taking something out of the freezer and putting the LOs in. If you don't mind eating the same things I think it's far better to eat your LOs than freeze them for another day.

It’s gone more or less according to plan except that I was out more than I expected and despite cutting down the recipe I ended up with 4 portions of curry instead of 2. I’ll be out at least one day.This week’s hm soup is carrot and coriander.

Chicken jalfrezi rice naan home made onion pickle and mango chutney
Monday
Pork loin steaks onion apple gravy
Carrots and mash
Tuesday
Toasties ham cheese red onion??
Fruit
Wednesday
Chicken , onion gravy, Baked potato, frozen peas.
Thursday
Homemade veg soup
Sandwich...maybe left over chicken / cheese onion/egg onion
Friday
Steaks (reduced ) onions peppers mushrooms
Maybe chips..depends how hungry we are.

Hey folks, shamelessly cross posting my recent and future cooking from the GC thread.
So here's what we’ve eaten so far this week and what’s coming up on our cooking plan:
Eaten
- Miso, ginger, garlic, and lime roasted chicken. It’s an Ottolenghi recipe that uses chicken thighs but I just applied the same spices to a whole chicken. It came out excellent. We still have some of that in the fridge. - Chinese vegetable soup made by OH. After we roasted the chicken, we added some to the soup to the extend it.
- Spinach, mushrooms, truffle sauce, cheddar and mozzarella tart last night. It used frozen spinach, frozen mushrooms, and a short pastry out of the freezer. Also the remainder of a jar of truffle pasta sauce that’s been in the fridge a while.
Cooking Soon
- Small lamb shanks - just pulled these out of the freezer for tomorrow’s dinner. Instead of stewing them in the cast iron pot, I think I might shallow braise them. Anybody have any favourite recipes or ideas? Would they be good with peppers braised along with them?
- Chicken & couscous salad - Using the leftover roasted chicken and adding some vegetables into the mix. OH would be able to take this for his work lunch since there’s no microwave there.
- Maybe a frittata - lots of kale, peppers and cheese all up in there.

Sat (today) - Seafood salad followed by a cheeky mince pie with cream
Sun - Pork & apple casserole, mash, sprouts
Mon - Spag bol (sauce from freezer)
Tue - Beef balti (from freezer), jacket spuds
Wed - Fishcakes, peas & sweetcorn (or maybe spicy wedges)
Thu - Chicken in white wine sauce, mash, carrots & swede
Fri - Egg & chips
Today I've made a tub of hummus and a batch of cherry scones. Lunchtime soups will come from the freezer - need to make some room for the Xmas mini vanilla cheesecakes I want to make later in the week.Be kind to others and to yourself too.6 -
