Well the cats have woke me up stupidly early, so I decided to prep some breakfast for later (baked oats). Shredded some carrots, and meal planned for next week 🙌.

I didn't end up having Tofu stri fry, as I was trying the red lentil tofu I'd made, but it wasn't to my liking. You have to try these things though, as it could have easily turned out the opposite way around.

So, I added the last of a packet of Linda McCartney shredded hoisin pieces to the rice.
Sunday is now Bourgignon as I need the freezer space, and I now don't have Tofu to use up.

This is my meal plan for next week.
Omelette will be done with Besan flour. I may swop the day with the pizza potatoes, as excited to try those!!

Stuck to plan this week apart from swapping over a couple of the meals due to the meat not defrosting enough for me to be able to marinade it overnight so had to have the lamb tagine a day later and the beef meal first.

    This week's plan:

S - lamb shanks, potatoes, veg
    M - stifado,mash, veg
    T - chicken chasseur, rice
W - beef and barley stew, mash
T - salmon parcels, potatoes, stir fry veg
F - Carribean lamb curry, rice
S - coq au vin, mash, veg

  • Stuck to plan last week. Didn’t eat out last night so made sausage, new potato and balsamic cherry tomato traybake. I am having pub supper after fireworks tonight though 😋 so plan is from tomorrow:

Sun - pork stroganoff, noodles, green beans
Mon - tuna and sweetcorn pasta, green veg
    Tues - beans on toast
Wed - eggs and mushrooms (either on toast or omelette)
Thurs - prawn and potato harissa stew

I’m out at least one day so only need to find 6 main meals.

steak, sweet potato wedges, mushrooms and onions, plus an egg if I feel greedy
    vegetable lasagne
sweet potato and spinach curry, brinjal bhaji
pork chop, mange tout, carrots x 2
    vegetable risotto

This week’s soup is cauliflower and coconut. Desserts will mainly be fresh fruit and yogourt but I’ll have the oven on tomorrow for the sweet potato wedges and to roast the veg for the lasagne so will probably make a cherry clafoutis (cherries from freezer) and a rice pudding if there’s room (it’s not a full sized oven).

Late again with the meal plan!

Sat (yesterday) - hm tomato & red pepper soup, cheese sandwich, mince pie
Sun - Roast beef slices in onion gravy, mash, sprouts & carrots
Mon - Chicken stir fry, noodles
    Tue - Gammon, egg, chips
    Wed - Fish pie, broccoli
Thu - Chilli & jacket spud
Fri - Cod fillet in hm batter. mushy peas

I'm not making any soup this week as there are already three different ones in the freezer to choose from but I did find half a pack of frozen puff pastry so I'll use that for some sausage rolls.  Lots of eggs in the pantry too so have hard boiled some for sandwiches and will also make a custard tart that can bake with the sausage rolls.
Be kind to others and to yourself too.
