    • Soup of the week - Leek and tattie
    • F - freezer rake or takeaway
    • Sa- Chicken Kyiv, flat mushrooms, oven chips and onion rings
    • Su - Roast pork, spuds, veg, gravy
    • M - Lamb keema saag
    • Tu - Toad in the hole, savoy cabbage, carrots
    • W - Pasta with chorizo, pesto and tomatoes
    • Th - Thai green chicken and veg curry.

    All as per plan last week. Really need to make some space in the freezer so this week’s plan uses some batch cooked meals as well as some previously prepared ingredients 😀

    Sat - butternut squash, chorizo and feta tostadas with guacamole 
    Sun - smoked salmon sandwich (out for lunch)
    Mon - spicy root veg and lentil stew 
    Tues - roast veg gnocchi 
    Wed - LO roast veg gnocchi 
    Thurs - salmon and broccoli pesto pasta 
    Fri - lamb and chickpea curry

    Eighth Anniversary 1,000 Posts Name Dropper
    Last week's meals went according to plan apart from swapping round Wed and Thurs.  In the event, DH wasn't feeling too clever on Thursday so the fishcakes were abandoned in favour of soup and a sandwich.  Never mind, we can have them this week.

    Sat - Salad (pilchards) to use up salad bits from the fridge
    Sun - Lamb, green beans, mash, hm mini Yorkies (from freezer)
    Mon - Gammon, chips, stuffed pepper
    Tue - Lamb slices in gravy, swede, mash
    Wed - Fishcakes, peas or green beans, croquettes
    Thu - Spag bol (need to make the sauce)
    Fri - Egg & chips

    On my To Do list for this week are: bol sauce, pear crumble, some kind of soup
    Be kind to others and to yourself too.

    Just reading back for inspiration, Here's a really nice vegetable biriani recipe. It freezes well and you can use any veg.

    250 g basmati rice
    1 teaspoon of ground ginger
    2 cloves of garlic, mashed to a paste with a little salt or use granules
    2 green chillies, finely chopped (or use more chilli powder)
    1 tsp garam masala
    half tsp ground cumin
    half tsp turmeric
    half tsp chilli powder
    100g yoghurt
    1 tbsp lime or lemon juice
    400g veg such as cauliflower, sweet potato, peas, onion, carrots.green beans.
    prepared into chunks.

    25g butter, melted
    2 tbsp milk, warmed
    half teaspoon of turmeric.

    vegetable oil, to fry

    Soak the rice for an hour and then boil it for 8 minutes.Then drain.
    Mix the spices into the yogurt and lemon juice. Then mix in the vegetables.
    Put a little oil into a frying pan and gently cook all the yogurt and spice coated veg for about 8 minutes, if they get too dry add a little water.
    Put the veg into the bottom of a casserole dish.
    Top with the rice.
    Mix the melted butter, milk and turmeric and flick this around the top of the rice.
    Put on a tight lid (you could use foil) and bake for about half an hour
    When it cooked you can add sultanas, crispy onions, almond/cashews

    My meal plan this week will be mostly previously cooked freezer meals, to minimise on washing up. 
    My boiler won't repressurise at the moment, so having to boil kettles to wash up; and in light of the current economic situation, do not really want to have to do this.
    Luckily, I have a gas check booked for the 5th, so they can take a look at the boiler aswell 🤞🏻

    Tonight will be mushroom risotto; though I ate midday meal late, so not very hungry.

    The other nights will be something like this 
    1) Burger on bun, hash browns and corn
    2) Katsu bake, edamame or green beans and chips
    3) Lentil Bourgignon with baby roast potatoes/mash and sprouts
    5) Chilli, sweet potato wedges and avocado
    6) Goan curry with onion rings and naan
         Mung bean curry with red cabbage
         Cauliflower Jalfrezi with rice
    7) BBQ jackfruit with edamame fettuccine. 

    Could I please get the lentil bourgignon recipe please, sounds like a great winter warmer

    Mostly to plan last week but had a few treats over the weekend.  This week is a mixture of freezer stuff and then some gousto stuff at the end of the week because they sent me a really good offer

    M - Lancashire hotpot with broccoli
    T - Leftover sweet and sour tofu from the freezer
    W - Bolognese 
    Th - Leftover curry
    F - Gousto meal
    S - Out at a wedding
    Su - Gousto meal

    As we went away in the motorhome at the weekend our meals changed a bit but mostly on plan.  So this coming week the plan is:

    M - Barnsley chop, mash, veg
    T - Spinach, aubergine and chickpea curry, rice
    W - toad in the hole, potatoes, veg
    T - some sort of hotpot with mince & veg
    F -  jerk chicken, rice 'n' peas
    S - beef stew
    S - lamb shanks

    I have everything in stock so nothing to buy to make dinners this week.

    I haven't posted a meal plan this week, as I honestly didn't know how I'd be feeling. I woke up on Monday with a serious stomach flare up. I suspected some sort of intolerance to something, which is normally wheat (but I'm OK with that recently); proceeded to feel sick for the next two days. So hadn't a clue what I wanted to eat. So, so far I've had:
    BBQ tofu with mixed veg rice and ranch dressing and vegetable stew and dumplings.
