Last week of my holiday at home so we'll have a steak night for a treat. This is the plan so far but it could change if we go out for the day, eat out or have a takeaway.
- Spaghetti with meatballs, tomato sauce and salad
- Sausage and butter bean casserole, mash and cabbage, leeks
- Chickpea n onion baked bhaji fritter type thing, dhal and rice
- Pork and apple burgers, fries
- Sirloin, mushroom peppercorn sauce, wedges and roast veggies
- Spanish omelette or savoury cheese pudding, salad
- Lemon and caper chicken, potatoes, carrots and broccoli (new recipe to try, it looks easy but fancy!)
I have gram flour that I've not been too sure what to do with. A little can go to the bhaji fritter thing but as it already uses chickpeas I can't see much being needed. Does anyone have any suggestions for chickpea flour?
Bought figs in the Ald* super 6 deal which I love so they'll appear as snacks and with a fig and prosciutto salad for lunch one day. Other lunches will be the usual salad sandwiches and leeks & potato soup.
Have a good week meal planners.2 -
So far the plan looks like this...
mon - hog dogs with fried onions and chilli beans
tue - gammon with parsnip chips and chilli fried courgettes and tomatoes
wed - gammon mash and peas
thur - roasted veg risotto
fri - last of the gammon stirred through left over veg risotto.
sat - turkey meatballs and pasta
sun - corned beef hash cakes with bakes beans
Lunches will be rice salad (just made a huge pot of rice/beans/onion/carrot/corn/runner beans/onion and added a jar of salsa and a big dollop of Mayo stirred through...nice and filling. I've got some cartons of chicken soup to use up too (from a local discount shop, worked out at 10p a carton, I can't make it for that).
Breakfast will be GF toast and yeast extract for me and porridge for DH
Gammon joint being cooked now for the week is one of the small £3.49 joints from Aldi and will be sliced once cold to make the most of it.4 -
Thanks everybody for keeping the thread going still.
Much appreciated.
I stuck to the plan last week apart from risotto. I ate leftovers of some sort or used something up more urgent.
This is this week's plan.

@K9sandFelines - what recipe do you use for the Goan curry? Could be a useful addition to my meal plan now it’s getting colder!

I have been away for a few days so need a 10/11 day plan to get me through until the weekend after next.
Slow cooker ox cheek in red wine with peppers, carrots and broccoli. I think I’ll get three portions out of the ox cheek so will eat two and freeze one.Gigantes plaki x 2 ( an experiment, using the recipe @goldfinches posted a while back)
Asparagus and mushroom risotto
Baked sausages, egg and sweet potato wedges x 2
pissaladière or stuffed focaccia and salad x 2
tuna broccoli and baby sweetcorn x23 -
Just back from nearly a month's holiday so only meal planned until Saturday as need to sort out my outside freezer (everything from the inside one ended up out there so that I could turn the f/F off while we were away!).
W - beef stew
T - corned beef hash
F - LO beef stew
S - mixed bean goulash, rice (based on a Jack Monroe recipe)
Once I know what I've already got I can decide what I need to buy for next week's meal plan!

Next week's meal plan:
Sat - Hm tomato & red pepper soup (from freezer), corned beef sandwich, tiramisu (my "easy" day)
Sun - Cottage pie (meat base from freezer, just need to top with mash), cabbage
Mon - Beef & pepper stir fry, noodles
Tue - Corned beef hash (to use up the open tin of meat), Yorkshires (from freezer)
Wed - Scampi & side salad (or maybe potato wedges if it's not salad weather)
Thu - Egg & chips with curry sauce
Fri - Some kind of fish meal (will be dependent on prices)
Everything barring the fish for Friday is from existing stocks so another cheap week. On my To Do list is bake a white loaf, fruit scones and Yorkshire parkin plus bolognaise sauce to use up the last portion of frozen mince.Be kind to others and to yourself too.1
