Just back from nearly a month's holiday so only meal planned until Saturday as need to sort out my outside freezer (everything from the inside one ended up out there so that I could turn the f/F off while we were away!).

    W - beef stew
    T - corned beef hash
    F - LO beef stew
S - mixed bean goulash, rice (based on a Jack Monroe recipe)

Once I know what I've already got I can decide what I need to buy for next week's meal plan!

Tomorrow's dinner needs to be changed as I don't have any mixed beans in the cupboard!  Have found a chicken curry and some cooked rice in the freezer so we'll have that instead.

  • Another week gone! Next week’s plan starting from today below (I’ve shopped today)

Fri - burger, oven chips, corn on the cob
Sat - bacon and egg fried rice
Sun - chicken, leek and cannellini bean traybake
Mon - spicy root vegetable and lentil stew
    Tues - fishfinger wrap
Wed - hoisin tuna, noodles, stir fried veg
    Thurs - salmon pesto pasta
Fri - sausage and spinach gnocchi
  • My eldest made our meal plan today, so this what he’s arranged

    Sunday- cheese potato pie
    Monday- burgers
    Tuesday - pesto pasta
    Wednesday- fish fingers and noodles
    Thursday- cottage pie and veg
Friday- bean chill, rice and wraps
Saturday - pizza and veg sticks

We will see if he cooks any of it aswell  :D

Usually do the biriyani in the slow cooker, then add to warm wraps once it’s ready. We have been using the chiquito sweet chilli wraps, as I got loads off olio and froze them a while ago, they are massive so you can get a big portion in one wrap. Or I make flat breads and roll them up. But you have definitely inspired me to use naan breads and also get some mango chutney to go with it, yum! Thank you.  :)

Think I will get on the biriyani bandwagon too this week  B)

Back at work tomorrow so it's going to be an easy week to break me in. I can see swaps happening as I have plenty of homemade ready meals in the freezer.

    In no particular order:

    - Mushroom and cheese omelette, salad
    - Baked potatoes likely with tuna sweetcorn or maybe beans and cheese, salad
    - Chicken casserole, potatoes, carrots, broccoli, greenbeans
    - Cod with pesto crumb topping, roast veggies
    - Pesto pasta, salad and garlic bread
    - Brisket from the freezer, mash, carrots, broccoli, greenbeans
    - Biriyani - likely chicken and I have mushrooms to use up

Soup this week is yellow split pea and ham. No baking, though I may make bread if I need the stress release!

I have found a packet of Quorn chicken like chunks in the freezer so maybe I can switch some or all of the chicken in the biriyani with that. OH is not keen on Quorn though.

Have a good week meal planners  :)

Thanks very much. I was thinking along the lines of those big rectangular naans in Aldi, the two packs.
Do you have a recipe for the biryani please? Think that's one curry I have never tried.

My meal plan this week will be mostly previously cooked freezer meals, to minimise on washing up.
My boiler won't repressurise at the moment, so having to boil kettles to wash up; and in light of the current economic situation, do not really want to have to do this.
Luckily, I have a gas check booked for the 5th, so they can take a look at the boiler aswell 🤞🏻

Tonight will be mushroom risotto; though I ate midday meal late, so not very hungry.

The other nights will be something like this
    1) Burger on bun, hash browns and corn
    2) Katsu bake, edamame or green beans and chips
    3) Lentil Bourgignon with baby roast potatoes/mash and sprouts
    5) Chilli, sweet potato wedges and avocado
    6) Goan curry with onion rings and naan
Mung bean curry with red cabbage
         Cauliflower Jalfrezi with rice
    7) BBQ jackfruit with edamame fettuccine.
