    I’ve decided to start using up stuff that has been in the freezer too long.  The first thing to come out is a small chicken, that might even be pre-pandemic.  So a definite chicken theme this coming week.

    roast chicken, mange tout, carrots and spinach 
    cold chicken and similar veg
    Slow cooker aubergine parmigiana x2
    chilli pork kidney and vegetable rice x 2
    chicken curry and curried green beans (probably enough chicken curry to have a second portion the following week)

  • Big stock up shop at Lidl today, although I didn’t actually need much to make the week’s meals. Plan looks like this:

    Sat - sausage and tomato gnocchi, sugar snap peas 
    Sun - smoked salmon sandwich (out for lunch 😋)
    Mon - broccoli and anchovy pasta 
    Tues - beans on toast 
    Wed - sweet chilli prawn and sugar snap pea noodles 
    Thurs - chorizo and cannellini bean hash with poached egg
    My week didn’t go to plan - ended up being away- so some meals will appear this week instead:

    Fri - chorizo, spinach and cannellini bean hash with poached egg
    Sat - steak with lemon and feta spinach 
    Sun - chorizo, spinach and sweet potato traybake 
    Mon - broccoli and anchovy pasta
    Tues - beans on toast
    Wed - tuna steak with bean and spinach mash
    Thurs - bacon and courgette pesto pasta 

    Can you tell there’s a huge bag of spinach to use up 😂

    @justkeepswimmimg I never thought of adding spinach to a traybake - at least I thought of it but dismissed the thought on the grounds the spinach would dry out too much.  How does that traybake work?

    It’s this recipe, @bouicca21 but I sometimes just chuck the spinach in the tray for the last few minutes 🙃

    Sunday:Savoury lentils
    These two meals ended up changing to Burger, corn coleslaw and onion rings last night and orange chicken and rice tonight.

    Next week's meal plan is as follows :

  • We're just back from holiday and wanted some comforting food to get us through the shock of going from 40 degree summer to a 15 degree autumn!

    M - Chicken and apple casserole
    T - Tomato and pepper risotto
    W - Fajitas
    T - Tomato and pepper risotto
    F - Korean style chicken
    S - Out at a friend's for dinner

    Lunches are going to be split pea soup which is currently bubbling away in the slow cooker.

  • Having a bit of a use up what’s in the freezer week this week to make a bit of room.

    Monday- ham hash, babycorn, mange tout and baked beans
    Tuesday- burgers, cucumber and carrot, Hm wedges
    Wednesy- Freezer - have some Mac cheese, breaded chicken and cobs to defrost and use, along with whatever else I find in there.
    Thursday- pesto pasta, pesto is in the freezer and will use some frozen veg
    Friday- chicken curry, naan bread and rice. Bread and chicken is in the freezer
    Weekend is still undecided for now.

    This week is looking like this so far. In not particular order and open to change:

    • Sausage, pepper and mushroom stir-fried rice
    • Cheesy lentil and rice bake with salad
    • Buffalo wings - sides tbc
    • Roast veg, sun-dried tomato and chorizo orzo
    • Mince and tatties with green beans and broccoli
    • HM pizza night (in front of the telly!)
    • Roast pork with all the trimmings

    If the weather keeps nice I have a notion to replace a meal with a charcuterie and cheese board. I'd add hb eggs, olives, pickles and salad bits to this with a bought French baguette. It's nice to have a picky dinner so this is possibly on the cards. 

    No baking this week!

    • Su - Pork fillet stuffed with black pudding, peppercorn sauce, roast spuds, various veg
    • M - Jamie Oliver "Salmon in a bag" with new potatoes and various veg Salmon in a bag | Jamie Oliver recipes (c/f from last week as plans ended up changing)
    • Tu - Out for dinner
    • W - Jamie Oliver One pan sausage pasta
    • Th - Chicken chasni, rice and Naan
