Here's this week's meal plan for us.
Sat - Fakeaway beef curry + rice, apple pie & custard for afters
Sun - Gammon, green beans, carrots, potatoes & Yorkies
Mon - Salad with cold gammon
Tue - Hm mince beef & onion pie, gravy, mash and cabbage
Wed - Cold gammon slices, stuffed pepper (mushrooms, cheese, breadcrumbs & sweet chilli sauce) & chips
Thu - Beef, onion, mushroom & green pepper stir fry in black bean sauce + noodles

Other things to make this week are carrot cake (loads of carrots in the fridge), fruit scones and pea & ham soup using the gammon stock as a base. Big stock up shop at Lidl today, although I didn’t actually need much to make the week’s meals. Plan looks like this:
Sat - sausage and tomato gnocchi, sugar snap peas
Sun - smoked salmon sandwich (out for lunch 😋)
Mon - broccoli and anchovy pasta
Tues - beans on toast
Wed - sweet chilli prawn and sugar snap pea noodles
Thurs - chorizo and cannellini bean hash with poached egg4 -
This week is looking like this: - Salad nicoise
- Sausage, apple and veg tray bake- Chicken breast stuffed with herby mascarpone , wrapped in bacon with roast tomatoes - HM breaded haddock, actifry chips and mushy peas- Chicken and cashew stir fry with noodles- Mushroom rissotto- Cauliflower, broccoli macaroni cheese
I need to use up mascarpone (why can't you buy a smaller tub), green beans, new potatoes and bacon rashers. The haddock is from the Iceland deal and not that great so I may do something different with it. Still have lots of baby tomatoes growing but they are better roasted than eaten raw. My watering has been erratic and the skins are tough.
We "procured" a few cooking-type ie tart apples, so I have an apple cake baking to cool, portion and add to my expanding box of frozen cake slices. I don't have anything chocolately in there yet, but I have a nice selection now that will last us a while.
Will make cauli soup for lunches with the usual sandwiches, crackers, fruit etc
Have a good week ahead meal-planners
