    Good morning meal planners.

I'm starting this week with a rubber chicken  :) It's been a while since I've done this but fancied the easiness and good value of stretching the meals out over a few days.

    • Roast chicken dinner with all the sides including stuffing.
    • Baked potatoes with coronation chicken and salad
    • Chicken, veg and rice soup with HM bread and some form of "pudding" tbc for afters
    • Spinach and ricotta cannelloni from the freezer with salad and maybe garlic bread
    • Bean chilli with wedges, toppings (creme fraiches, sprinkle of cheddar) and salad
    • Trout, new potatoes, green beans, carrots and broccoli
    • Something with eggs - maybe frittata or quiche or possibly an egg curry. Not had that for a long while and it's surprisingly good

Lunches are usually sandwiches with salad and a protein. There is fruit, yoghurt and cheeses if snacks are required. Since I will bake bread this week something else can go in the oven - thinking a lemon blueberry muffin cake. This would be nice warmed with a dollop of creme fraiche after the soup-night dinner.

    Have a good week everyone.

    Hi all,
Getting back into meal planning now that the schools are headed back (tomorrow). We aren't having a heat wave here, in fact it's misty/foggy and only slightly warm, so our meals might not look that summery!

Monday - Burgers Rolls with roasted sweet potato and mushroom (the mushroom will likely go on the burger)
    Tuesday - Chicken Stew
    Wednesday - Spag Bol
    Thursday - L/O Spag Bol
Friday - Smoked Sausage and pea risotto
Saturday - HM Pizzas (I have some bought in bases from previously, so technically only home constructed!).
Sunday - Frittata, Hash Browns and Beans

Lunches (me and DS - who pops over from school) - HM Soup, beans on toast, toast and cheese spread/jam, Sausage Rolls, Baked Tatties

Breakfasts will be cereal, porridge (DS), and whatever other random oat based products are kicking around, and also some fruit.

Snacks will also be fruit, biscuits, yoghurts, crisps - basically treats lurking from the summer break!

    Have a good week all.

    The rest of my week

Pizza has been moved forward,  as instead I had Leftover couscous with harissa pesto and veg mixed in.
Lablabi is not on the menu.

Yesterday : Sausage roll and chips (literally had no appetite, and no beans to go with it. Now bought)
    Goan curry with rice
Pizza (on Chipotle flat breads from Aldi)
Oriental (use up sauce in fridge)
    Moroccan stew (freezer)
    Roasted veg,  pasta and pesto
    Something with mince

Reserve meals of: Oriental bits -  spring rolls,  bao buns,  prawn crackers,  prawn toast that's sort of thing (all vegan)
Picnic type meal,  out somewhere, if the weather is nice

DD1 has asked me to babysit,  and DD2 is also coming for the weekend,  so could go awry 😂
GC Jan £101.91/£150 Feb £70.96/150 Mar £100.43/150 Apr £108.45 app/150 May £149.70/150 Jun £155.15/150 July £76.30/£150 (includes food, toiletries and cleaning from 13th to 12th of each month. One person vegan household with occasional visitors)

I’ve had a lot of one off expenses this month so the next 4-5 weeks have to be low spend so that I can build the emergency fund back up.  Meal plan has to use what is already in the fridge/freezer/store cupboard so that I can avoid a trip to the shops for as long as possible. Fortunately all are well stocked and there are blackberries locally.

Mediterranean veg tart and salad, blackberry and apple crumble with custard x2
tuna anchovy olive pasta with extra veg to make sure of my 5 a day, fresh fruit and kefir - x2
salmon fillet, roasted veg, cherry clafoutis and kefir x2
pork chop and the cheapest veg I can buy, raspberry milk jelly (fluff)
