    S - Roast chicken dinner

    M - Cold chicken, chips, beans

    T - Beef bourguignon, mash, veg

    W - Cauli cheese, chips

    T - Veg chilli, rice

    F - away in motorhome!

    Chicken bacon avocado salad, blackberry and apple crumble
    fish stir fry, pineapple and yogourt
    fish stir fry, fruit salad
    ham salad, blackberries and yogourt
    baked fish, roast Mediterranean veg, sweet potato wedges, pineapple and yogourt x2
    pasta puttanesca, fruit salad

    Sat curry
    Sun : pie mash and veg.
    Mon : quiche, salad and actifry potatoes.
    Tues : vege lasagne and salad.
    Wed :  steak and stirfry 
    Thurs : bean chilli and rice
    Fri : fish.

    This weeks plan:

    M - Beef stew and broccoli
    T - Mushroom risotto
    W - 3 bean chilli and rice
    Th - Mushroom risotto
    F - Chicken parmigiana with roasted pepper and potato cubes and salad
    S - Spaghetti and meatballs, salad

    Breakfasts are a combo of yogurt, fruit and cereal during the working week and then something with eggs at the weekend.  Lunches are salads for me and sandwiches for DH.

  • Hi everyone, missed last week as we went away for a few days. Back this week, trying to make a plan of not using the oven in the hot weather so it’s not the most adventurous/healthy but needs must! 

    Today- using up part packs from the freezer, fish less fingers, nuggets, chips etc with peas 
    Tuesday- slow cooker unstuffed peppers
    Wednesday- tomato pasta with sweet corn and veg sticks
    Thursday- Beans on toast
    Friday- Veg kebab wraps and salad 
    Saturday- hot dogs & noodles with broccoli 
    Sunday- Faggots, chips and mushy pea .. supposed to be abit cooler here, if not this will be changed.

    breakfast is weetabix. Going to try the kids with overnight oats aswell this week. 
    Lunches - cheese and cucumber wholemeal wraps with carrot sticks for most of the week, will improvise when these run out.  :)

    This week's plan so far. My Daughter is here until Thursday day.

    Today we had Bbq Jackfruit and Linguine
    Tomorrow is Vegan  Koftas and couscous
    Wednesday Jacket Potato with Jackfruit "Tuna" 

    I will come back with Thursday - Sunday.

    This week's been so far unorganised as I had visitors staying over to Monday evening and there were lovely outtings and a meal out to distract me. That's my excuse!

    Mon - Chinese meal out (absolutely delicious and far too much food)
    Tues - I asked for doggy bags for all the leftovers so that was dinner
    Wed - scrambled egg on toast as I'm wilting and have nothing prepared
    Thur - pasta with freezer bolognaise, salad
    Fri -  Dhal from the freezer, rice and I think I'll stick veg / potatoes in the slow-cooker to make a spicy dry-style curry side. 
    Sat - HM pizza night - yeh! I love making bread dough and eating carbs :smiley:
    Sun - Something with chicken pieces - maybe chasseury or fricassee like

    I had to google spanakopita  :D and it reminded me there is filo in the freezer and feta looking for a home. I've also been perusing French recipes and fancy a Limoges style potato pie so I can see pastry n' pies in the near future!

    I had no filo, so used Gluten Free puff pastry that had been in the freezer for far too long, and it worked fine.
    I hope yours does too :)
