Sa - Chicken curry and rice
Su - Pork & apple casserole, broccoli & mash
Mo - Salad with a hm quiche (might get changed to pilchards or tinned salmon)
Tu - Spag bol
We - Toad in the hole, broccoli & mash
Th - Tuna & mushroom pasta in a creamy white wine sauce
Fr - Haddock fishcakes & mushy peas
All from existing stocks, so a nice cheap week. I'll need to do some baking at some stage but have a good selection of hm soups in the freezer for lunchtimes - I think we'll need them as it's getting a bit chilly. Today max of 14C and between 15-18C over the next few days. Autumn's here.Be kind to others and to yourself too.3 -
Another slight change of plan, had a guest yesterday evening so the bacon and courgette pasta moved to tonight. Off work next Friday so planned up to Thursday:
Sat - leftover bacon and courgette pesto pasta
Sun - lamb leg steak, new potatoes, cabbage
Mon - chickpea and chorizo stew
Tues - fishfinger sandwich
Wed - pea and feta orzo
Thurs - sausage, spinach and mushroom gnocchi3 -
Going away so only need to find 5 main meals this week. I have plums to use up so probably most days the pud will be stewed plums and yogurt. I think I only need to buy milk and yogurt to see me through the week.
half ys poussin, roast Mediterranean veg x 2
sea bass, mange tout, baby sweetcorn x 2
tortelloni in hm tomato sauce4 -
Had an unexpected visit from sons yesterday who requested HM burgers. Only had 2 in the freezer but defrosted a portion of mince to reconstruct 4 burgers. With lots of trimmings and sides they turned out better than fast food ones!
The rest of the week is looking like this:- Burgers, trimmings and af chips (Mon)
- Creamy chicken and mushroom pasta, salad (Tue)
- HM quiche and salad
- Mackerel or salmon - to be decided
- Smoked haddock and pea risotto
- Brisket, roast potatoes and veg - or maybe just chuck all in the SC
- Enchiladas with freezer chilli and salad
I baked a blueberry and lemon muffin cake yesterday for "afters" with creme fraiche, there's enough for an afternoon treat for the next few days. With the weather turning nippy some celery soup will be made for lunches. I can see wholemeal cheese scones going well with that soup but I really really need to bake less, and of course eat less....haha, famous last words
Have a good week meal planners2 -

F - Chicken dhal from the freezer
S - Pasta bake with a sauce from the freezer

Since yesterday was quite dull and cool, the planned salad with hm quiche was abandoned in favour of a bit of a fry-up - bacon, mushrooms, potato cake & tomato. Quiche not wasted though as we ate that this lunchtime.
Otherwise, all on track.
