Late to the party as I’ve been away. Later this week I will be cooking a late Christmas dinner with some friends. In the meantime I will be using up the various leftovers from the real thing, and when they run out I will have a go at @joedenise’s recipe for hm faggots.4

Hope everyone had a pleasant Christmas 😊

Lagging behind this week! Xmas Eve we had soup and a sandwich, Xmas Day was obviously Xmas dinner and yesterday was a picky tea - not particularly healthy, I know, but was much enjoyed.
Tonight (Tue) - Xmas dinner v.2
Wed - Sausage, mash, broccoli
Thur - Spag bol
Fri - Cod fillets, chips, peas
Sat - Seafood platter
Sun (NYD) - Roast beef, Yorkshires, mash, veg
Be kind to others and to yourself too.2 -
Will probably vary a bit depending on leftovers and visitors.
F- freezer rake or takeaway
S - Chicken wings, HM wedges, corn, salad
S - Steak & sausage pie, pork wellington assorted veg/spuds and gravy
M- leftovers
T - Cajun chicken breast, rice & beans, salad
W - Cumberland sausage rings, baked potatoes, veg & onion gravy

Need to start thinking about next week's menu plan. Going to try and use up some of the freezer food/HM ready meals throughout January to try and keep the shopping a bit lower.

Today is pretend Xmas for friends. I’m expecting to have left over pud for dessert during the week. I’ve made hm faggots using the recipe posted by @joedenise. Even though I’ve halved the quantity I reckon I have enough for two meals and maybe one for the freezer. I also still have liver and pork mince that I did not use, so that’s me sorted for most of the the week.
hm faggots in onion gravy with spinach and green beans, pineapple clafoutis x 2
lamb liver with onions and spinach, Xmas pud
pork mince stir fry, bread and whisky butter pudding x 2
rolled breast of lamb, carrots, sprouts, whatever is left for dessert

@bouicca21 - I usually make half the recipe too but I only get 2 portions from it, so one meal for DH and I. Is there just you if you think there's enough for 3 meals?

@joedenise. Yes, there is just me. Working on the principle that a portion of meat should be 125g, then I should get 3 portions. OTH I don’t need a lot of persuading to just have a bigger helping. Taste test of the mixture fried was good! Definitely an addition to my repertoire.I have ended up with a very smooth, pate like mixture. My long distance memory of childhood faggots was of a rougher texture, so next time I might not blitz them quite so long, or maybe just stir in the breadcrumbs.2

Glad you like them. You can vary the texture by the length of time you blitz the mixture; I tend to stop just before the smooth pate stage as I do like a bit of texture to them.
If you've had the Brains faggots recently then you'll find that they are even smoother than pate! They had no texture at all and weren't particularly nice which is why I started making my own. They are definitely going on this month's menu plan!
