    Glad you enjoyed the curry @maman.  Maybe you could stretch it with chickpeas (extra Protein!); cauliflower and butternut squash are good for stretching curry as well as being even more Speed!  I like to use grated butternut squash which I keep in the freezer (it's something I use when I make butter chicken - it's a trick that I got from SlimmingEats website).

    When I use butternut squash for a dish I usually grate about 1/4 of it and freeze it it small amounts (about 150g which is what's needed for butter chicken).  Now that is one curry that's never enough for more than one meal for us!

    Thanks @joedenise. I'd never thought of grating BNS. That's a good tip. At the moment I've just got frozen chunks but I'll definitely grate some for the future. I think I'll be using chick peas (and other pulses) to stretch meals more in the coming months too. 😊

    I use dried chickpeas and usually just do enough for the equivalent of one can but going forward I've decided I'm going to soak and cook a bagful at a time and then freeze in canful equivalent amounts.

    Next time I can get to Waitrose I'm going to pick up a couple of packs of their 10 bean mix and then I'll do the same with that.  I use them to make the mixed bean goulash which is based on a Jack Monroe recipe.

    I've still got a butternut squash in the cupboard so will definitely be freezing more of it grated when I use it.

    So much for sticking to plan 100%!  DD1 phoned yesterday and she and her partner are taking us out, with his parents, for a meal this evening.  They've chosen a Beefeater and there doesn't seem to be any syn values on the website but I'll have a look in the book to see if there's anything in there otherwise I'll just have to try to be careful.

    Today's plan:

    B - fry up - BGTY sausages, bacon, mushrooms, tomatoes, beans - P; S; F; 3
    L - mixed vegetable and lentil soup (from freezer) - P; S; F
    D - ??? but probably steak, roasted vegetables and maybe some rice (everything seems to come with chips!)

    HEA - milk
    HEB - none planned
    Syns - 2 BGTY sausages 3; dinner?; couple of G&Ts 6

    Afternoon all :smiley:

    Maman, he doesn't know yet when treatment is starting. Think mum said week tomorrow he sees consultant, then the next day the stoma nurse is going to the house. Also they need to arrange the transport, but would no good early for them as they are not up early and the traffic is horrendous into Northampton early morning, so about 10-10.30 would be best .

    Just had ham and cheese spread egg wraps.
    Roast chicken for dinner with million veg, yorkies 2 syns, gravy 3 syns and might have some stuffing,

    Going to make a hexb cheesecake in a bit, i need to get tidied up first!

    Was a hard frost again this morning but the sun is out and 2 loads on the line :smiley:

    That's an awful lot to take on board for them @bubbs. They could end up spending most of the day toing and froing to the hospital. 🙁 I suppose it has to be better than being an in patient though. 

    I need to have a look around at prices of dried pulses @joedenise. I'm not sure it's always cost effective to cook them yourself. Just googling quickly I notice that the cost per kg (£2.40) of the Waitrose beans is the same as cans of mixed beans from Aldi.  Probably not as many varieties of beans but worth thinking about. 🤔

    Enjoy your meal with the family. Beefeater used to do JPs at one time but no longer. Anyway. it's good to go out and celebrate both your birthday and Mothers' Day! 😁

    The difference being 1Kg of dried beans gives you 2Kg of cooked beans; so the tinned beans are around double the price.   The price isn't the main consideration at the moment but that may well change over time!  I actually like the 10 beans mix as it contains beans that you don't get in the tinned ones.  I don't buy them very often as we don't have a Waitrose anywhere near where I live so I only pick them up when we out and about with the motorhome.  Unfortunately there wasn't one when we visited places while we were in Devon.

    We're going away for Easter so if I come across a Waitrose I'll probably pick up a couple of packs.

    Oh of course @joedenise. How stupid of me! I hadn't thought of them increasing in volume! 🤣 My last lot of butter beans I did in the slow cooker and it was really simple. I'll now have a totally different mindset when it comes to looking at prices. We're lucky enough to have lots of Waitrose branches but probably because the Waitrose farm is near here on land John Lewis lived most of his life. His former home is a sort of hotel where the partners can go and relax. 

    I really enjoyed the JP with curry. Yum! 😋

  • Hi all, 

    Since making the mushy pea curry, I've taken to adding a ton of mushy peas to my curries. It helps with thickness and making it stretch a bit further. Also added spinach to our curry last night, not something I use that often but it aus a veg I can add and the children don't moan. 
    We had red rice for something different but wasn't keen on that. 

    Dinner tonight is beef casserole for me and the boys and chicken casserole for the Husband and daughter. Plenty of veg with it and included lentils to help thicken it up.

    Spoke with my sister has she has been over today, soon as she walked in mum burst into tears 😥 no sleep again , dad also fell out of bed fidgeting , went in the living room and re arranged the furniture 🙄 she said she is not going to be able to cope and doesn't know what she is going to do, he can't even manage to go wee on his own :(

    He said to my sister must drink a lot of water, she said yes it is good for you, he said then i can get this off on about the stoma, Mum said no you have it for the rest of your life, she also told him this yesterday when i was there .

    How this is going to pan out don't know as if mum don't get any help she will end up ill :(
