Morning all, a bit misty this morning but think it will probably warm up later. ย Going to be a quiet day today but do need to pop into town as want to go to the market and the stall we want is only there on Tuesday (our market days are Tuesday and Saturday and I don't like going at the weekend as it can get a bit busy!).
Today's plan:
B - baked oats - HEB; S; F; 1
L - ham salad with pickles - P; S; F
D - beef casserole, mash & green veg - P; S; F
HEA - milk
HEB - oats
Syns - cooked fruit 1

Morning all!ย I'll take some quiche off your hands too @bubbs if I lived closer!ย And you can do as many masters as you like @beanie, the universities don't care as long as they get your money!ย My first one was to make it easier to get into my field of work and the second one was paid for by my old company as a "sorry we haven't given you any development for years / have a piece of paper to confirm you know what you're talking about" ๐ย Have just had a rapid try on session of clothes to try and work out what I'm going to wear to the thing tomorrow and have narrowed it down to 2 dresses or if I'm brave then a tailored jumpsuit ๐ย Will ask DH for feedback this evening.
Had yogurt and blueberries for breakfast this morning, lunch is going to be lentil soup with a sausage cut up in it (leftover from dinner last night).ย Dinner tonight, we're going to meet some friends for dinner who we haven't seen for about 3 years so looking forward to that.ย Have had a look at the menu and so far a brie and beetroot tart looks to be the winner on the menu, but will wait until we get there and see what specials they have.ย ย

I think it was @joedenise that asked for the boursin soup recipe. It is basically an oven based soup. I roasted tomatoes, peppers, red onion, cloves of garlic, fresh basil, frylighted it all, balsamic vinegar and roasted with some boursin. Once it was all cooked down and lovely I blitzed it. I made a smaller version of the recipe I saw online and she didnโt need to add water, I did add a little, you can strain it too if need be. Think it depends how fresh the veg are that you roast. Works out pretty low calorie which is good, was nice for a change.
B fruit and fibre ss milk ( forgot to get cereal at the weekend so will have to nip and get more tonight)
L โ boursin soup โ boiled egg โ chicken satay
D โ LO sausage casserole and mash
ย The sausase casserole is basically LF sausages onions and carrots browned off a bit, cooked in water and stock then I make a tiny amount of cornflour and water and add to thicken, served with mashed tats. Was craving comfort food! Must admit, its not as good as full fat sausages!

Change of plan for lunch! ย DH didn't fancy salad so we're having ham, egg, beans, grilled tomatoes, chips instead. ย Can't say I blame him not wanting salad!

I'm sure you'll find an outfit you feel good in @ruby_eskimo. Like @beanielou, I hadn't thought of doing another Masters. Mine was paid for by my employer too. I was given time off for the taught part (measly 2 hours per week), the rest of the work I had to find time for myself in evenings and weekends. Hard work but a sense of achievement at the end. ๐
I'm slowly using up freezer stuff. This week I didn't need anything but fresh fruit and vegetables but I did buy some tinned tomatoes and other store cupboard bits just to stock up..
I did get a bit hungry last night but stuck to very SW friendly snacks so no syns used.
Today's EE plan-
B- NAS grapefruit squash, banana (F), HEB porridge, HEA milk, berries (S)
L- ham, fried egg (P), veg hash and beetroot (S)ย
D- veggie chilli (P,S), brown rice (F), cottage cheese (P)
