I think if it were me I would just laugh & wave at them every time I saw them peeping out the window.
Especially a really belly laugh like you find someone ridiculous.2 -

Quick update, we eventually opted for bamboo!
It's only one plant for now, in a pot, half a metre from their window and doesn't actually cover much yet but...she's already threatened that she demands the plant moved TODAY and that nothing can be put there ever again, not even for a day.
I'll grab the popcorn...4 -
How would she get into your garden? Can you put a lock on the gate so she can't get in.

You can please some of the people some of the time, all of the people some of the time, some of the people all of the time but you can never please all of the people all of the time1 -
In terms of the photographs they are taking of you, if you see them, can you just pose for the photos, personally I'd do a moonie but I don't think you'd get away with it lol.

It's just a matter of understanding where she's willing to take all these threats.1 -
In that case I would just ignore her from now on, if she can't get into your garden then she can't cause any damage and if you are ignoring her she can't claim you are being racist towards her.

It's just a matter of understanding where she's willing to take all these threats. Now you've taken this perfectly legitimate action (but only one plant? Pfffft...), I suggest you need to reinforce it with a matter-of-fact no-nonsense approach. Calm and civil at all times, but putting an unambiguous line down in the sand. NO discussion. NO silliness. Just state it the way it'll be - "These plants are for our privacy because you kept intruding on it - so they are there to stay."They threaten to come on to your land and damage them? "That would be criminal damage, and I'd be entitled to involve the police."Kept it short and simple and unquestionable; "Do that, and I will call the police." And do so.It just needs to stop.If they rant, and you just answer back, they will continue to rant. If you are ok with that, then fine. But, if - even when they are hidden behind the shrubs - they still intrude on your privacy and peace, and harass with their moaning, I suggest it needs nipping.Enough already.Note down every daft comment and threat. Camera sorted now? Good. If they do cause any damage, then police on speed dial.4 -

It's just a matter of understanding where she's willing to take all these threats. All shall be well, and all shall be well, and all manner of things shall be well.
Pedant alert - it's could have, not could of.2
