Suffolk_lass said:Made the tart in your recipe for supper last night - with a basic iceberg lettuce salad and using the onions I had, rather than red ones. I finished it in a hot oven for 10+ minutes to make sure the top was golden brown and toasty - it was so pretty. In my non-fan oven I would say it needs to be a bit hotter than the recipe. Never made oat pastry before but will do that again. Very tasty and DH had what he described as a tidying portion (! - I had cut a quarter between us). We might have omelette tonight as still have plenty of eggs from the extra dozen last week
My OH tried to have a tidying portion when I made it - but we each had a quarter so put the breaks on that one pdq! We had the second portion warmed (from the freezer) on Friday for lunch - It froze & reheated really well - just as tasty the second time round! - I love the concept of cook once eat twice 😁4 YEARS 10 MONTHS DEBT FREE!!! In work I can feed a tonne a day through the peeler. Now we use big brutes of carrots - lumpers we call them. Now some of them are the size of a baby's arm, some the ends have broken, or some are just too curly to go through the machine, so I can easily bring home 20kg of these a day. Now there is nowt wrong with them, other than the machine won't take them and we are too busy to hand peel, so they end up being sent for animal feed. I liberate a bag to feed the donkeys and pony in the field behind me, Before Covid, I had a lot of horse owners Id meet up with to pass them on, now Im struggling to find homes for them. We do eat them ourselves as do the neighbours, but Im talking carrots so big, one is plenty for a family of four
Or put outside with a Free sign for passers-by?
Or a local food bank?7 -
One of the women locally brings home a net bag of carrots for horses occasionally and sells big bags outside her house. She lives in such a back lane I always think they are for people visiting their horse/pony and wanting a little treat at their liveried stables and they must be people she knows as the only passing trade is cyclists and golfers.
We had jacket potatoes and soup last night. It just got too late to faff.
We also switched off our electric range for the summer. Time for a little bit of maintenance. I want to take the hob covers off and degrease the hinge parts properly, and clean the undersides that have some spatter evidence. And the register plate got lifted off its mortar fixings in a gale and is in need of attention that has been impossible through the winter months. It has to be sorted as it wobbles in the wind and lets a small amount of soot down. So you clean down before bed and then come down in the morning to a sooty dust after a windy night. Nightmare. I'm sure the soot does us no real harm (my 90-something year old auntie was brought up in a Derbyshire mining location where they cleaned their teeth with it) but I don't like the idea of added grit to my cooking and I can't keep everything covered all the time.Save £12k in 2024 - #2 target is £5000 only £798.34 so far

You could make a carrot jam/relish with the carrots 😉 cut the carrots into fine batons (or grate them if you can't be bothered!) pop them into a saucepan with some water, star anise, cumin and cinnamon, bring to the boil then simmer for 10 mins or so until carrots are almost tender, add sugar then when sugar is dissolved boil as you would jam until the liquid is at setting point and jar.
You could also dehydrate them (and the potatoes) and store in airtight containers until casserole season 😉8 -
Egg salad with french bread for our supper - simple and delicious, and I only picked a few bits of brown off the lettuce and one manky bit off the cucumber. Well, you could not tell and it was simple and delicious.
DH ignored my shopping list in some respects and did his own thing. Better to bite my tongue, but a small packet of cream crackers in the classic brand for £1 versus to large packs of own brand for 80p rankles! If they have not got the thing don't get a more expensive substitute!Save £12k in 2024 - #2 target is £5000 only £798.34 so far

Today I had some of the mixed veg and herb stirfry mixed with vegan gravy that I made yesterday, but today I added the mushroom and truffle soup, to make a sort of stew/very thick soup thing.
Tomorrow I need to use the last of the asparagus stalks before a new lot arrives on Thursday! 😁(I just lurve spiders!)
