OH didn't fancy the mince & aubergine sauce with pasta that I'd put in the use it up (reverse) meal plan. Will put that sauce on hold & cook it on the weekend, then freeze in individual portions.
For dinner tonight, we did a freezer dive & had some 'cook once eat twice' chicken pot pie along with the last of the carrots!4 YEARS 10 MONTHS DEBT FREE!!! I have a glut of eggs due to an ordering error (well two, one of mine and one of Milk & More's - mine was due to not trusting them to get it right, which they didn't, but I was expecting them not to deliver rather than deliver twice as many as I wanted!), so Saturday lunch was salad with eggs and tuna, Sunday lunch was feta salad, yesterday's lunch was egg salad, today's lunch was bacon & pepper omelette with salad. Tomorrow I might skip eggs... Yesterday afternoon I had a smoothie - as I have late yoga I just have a big lunch and a snack in the afternoon. Today's supper was beef stew and cauliflower & broccoli cheese from the freezer with steamed french beans. Tomorrow is another yoga day, so either feta salad or soup for lunch, and then either a smoothie or soup before yoga.
I have an aubergine that I need to remember to do something with before Thursday's veg boxes arrive. The salad will probably be finished by then and the rest of the stuff (cabbage, carrots, fennel) will all last. Salad box and cooks' box this week, plus some kefir and smoked tofu. Cherry toms due from the milkman on Friday with the yogurt, eggs due on Monday. I should probably turn on the outside fridge so i can defrost and cook the turkey that is currently residing in the outside freezer.7 -
We also have a bit of a glut of eggs - we send 6 each week to one neighbour, and 12 to my aunt. I asked my cousin to confirm earlier if he does not want these and he was earlier - Monday instead of Tuesday but they had been delivered by then. I have another friend who has six every week or two and we eat the rest! A dozen every Monday and Friday means some weeks we have a dozen more and some weeks none! Fortunately our friend who delivers them from his chickens can occasionally bring more. It was not what I had in mind when I retired...
We are going to have aubergine this week - probably tomorrow with the last of my homemade passata and with baked cheese.
Last night we had asparagus (probably the last crop from the garden) with new potatoes and 2 poached eggs each, melted butter and a bit of grated cheese it was yummy.Save £12k in 2025 #2 I am at £4863.32 out of £6000 after May (81.05%)

I'd like to join, if I may. There are 3 of us, 2 vegans and 1 who eats whatever we put in front of her (she's 98) and 2 cats and I'm forever trying to think of what to make. Sometimes it gets pasta sauce/pesto added, and is then eaten with pasta, sometimes stock is added and it ends up as a stew thing, with potatoes, sometimes I add a chilli pesto and have it with rice, and sometimes I mix and match those combinations! 😁
By the way, I’m quite new on here too, but never forward-plan meals, so it’s a useful thread all right!
By the way @greenbee, I got a cook’s ingredients box and a medium veg box today, so am now wondering how I am going to quarantine/wash all the items into my small fridge!
I think I will be utilising ice packs overnight!
But.......joy of joy of joys!!!! I finally got the wild sea purslane! Hurray! (Dances for joy!)
Plus potatoes and and carrots again, but haven’t had any for a couple of weeks, so have PLANS! 😂😂😂
I feel a potato peel pie coming on! 😂

Cooks box and the new salad box @Pyxis - sea purslane, sea spinach, lots of cherry toms, 2 kinds of cucumber, thyme, baby peppers, red pointed pepper, radishes, 2 different bags of salad, jersey royals, black garlic, tenderstem broccoli, asparagus (fairly tired looking TBH but I've just eaten it so that's not an issue), fennel, lemon, galia melons. Probably something else I've forgotten... So I'm planning fish tomorrow with the sea purslane, sea spinach and some of the fennel I over-ordered from tesco a couple of weeks ago.
My chocolate delivery also arrived...8 -
Had some spinach and tomato sauce which needed using up so I made a spinach and mascarpone cannelloni with some frozen beans and peas. Very nice it was too.7

Decided that I should use the wild mushrooms and some of the asparagus straight away, so I sautéed the tips of the asparagus and the mushrooms in some butter and have just eaten them! Yum!
Kept the asp stalks for another day!
Have put ice packs under the quarantined veg and will deal with them tomorrow.(I just lurve spiders!)
