Don’t talk to me about carrots! I have just used the last three (well, two, as the third was only fit for the compost heap!) of a gigantinormous carrot mountain!
Have you tried making carrot crisps? They are actually quite nice, once you have got over laughing your head off at how small they become during the process! 🥕🥕🥕
I’ve just had a very nice meal. After tidying up my fridge, I decided to postpone the Asparamancy until tomorrow, as I found the last two carrots, some forgotten sprouting broccoli stalks, half a courgette, half a red pepper, some asparagus stalks, some flat green beans, two tired potatoes and a dog-end of a fennel bulb in the bowels of the fridge, so chopped them all up, added the dried-up dregs of a jar of onion granules, loads of different fresh herbs and garlic, all chopped up, stir-fried them, then added a tub of vegan gravy that needed using up, two-thirds of a tube of tomato puree, ground black pepper and a small jar of roasted red pepper pesto.
Then I stirred in some grated Parmesan.
That all made four very good portions of a tasty ‘something’. Today, I had one portion with pasta shells, and I will have another portion tomorrow with rice, and one with some potatoes that need eating, and the last portion........well, I will eat that with whatever takes my fancy! 😁(I just lurve spiders!)

Thanks for the carrot ideas peeps 😉Just made air fried mushrooms, stuffed with Philly cheese, breadcrumbs , garlic n chilli, n had it with noodles n green beans .Was strangely lush 😉😋I love experimenting with recipes, n am chuffed they worked in the air fryer 😁

Edit to add, I left it too late to make pastry and DH's battery was flat so I adapted the defrosted bacon and added it (cooked crisp) to cheese sauce that I mixed through macaroni. Served with good old tomato ketchup. Filling and satisfying but not sure I burnt enough calories to have pasta if I am honest.Save £12k in 2025 #2 I am at £4863.32 out of £6000 after May (81.05%)

I’m going to have the last of my dog-end stir-fry thing that I made four portions of the other day, with a couple of the last potatoes.
Then later I shall have some fresh asparagus (!) with the remaining potatoes in a watercress sauce.
I got a ready meal out of the freezer for tomorrow.....one of the few nice ones that I’ve found....a mushroom stroganoff with wild rice.........although I will probably chop up some fresh veg to have as well. (Celery, fennel, red peppers, courgette and lots of fresh herbs including fresh turmeric and root ginger).
Some of that chopped fresh veg will go into a mushroom and truffle soup that I bought from my veg box people, to try. That will probably make two more meals.
Guess what! I’ve run out of carrots! And after today, I will have run out of potatoes! 😁(I just lurve spiders!)

I only have 2 carrots left - but they are ginormous. No shortage on onions or potatoes but all other shop-bought veg has gone. Another small crop of asparagus to pick and then I think we will let it go to seed so the goodness goes back into the crowns for next year. Don't talk to me about carrots
In work I can feed a tonne a day through the peeler. Now we use big brutes of carrots - lumpers we call them. Now some of them are the size of a baby's arm, some the ends have broken, or some are just too curly to go through the machine, so I can easily bring home 20kg of these a day. Now there is nowt wrong with them, other than the machine won't take them and we are too busy to hand peel, so they end up being sent for animal feed. I liberate a bag to feed the donkeys and pony in the field behind me, Before Covid, I had a lot of horse owners Id meet up with to pass them on, now Im struggling to find homes for them. We do eat them ourselves as do the neighbours, but Im talking carrots so big, one is plenty for a family of four9
