    Investigated the fridge and found a jar of strawberry jam. We only use it infrequently for cake making, so I made a jam sponge pudding to use it up. That will do for puddings for the next few days with vanilla ice cream.

    I used up the spring onions (scallions) and streaky bacon with the little gem lettuces for supper last night. I was not able to buy cream as the refrigerator controller at the local SM had failed and everything ran hot overnight so none could be sold. A good job I had the remnants in a bottle left which I rinsed with blue top milk and I think I got away with it - that braised lettuce recipe is becoming a regular supper dish for us - thank you @joedenise for sharing yours - that is what this thread is all about!

    I was also going to suggest you could do southern fried chicken to combine your chicken and buttermilk @CCW007.

    I am out to eat today so have got a pot of RM chilli out of the freezer for DH to have (date on the lid suggests Jan '21!!! 🤫). Hopefully he will realise it is two large portions but we will see

    Most meals are from fridge/freezer and cupboard today.

    B - sausages, eggs, mushrooms, beans, fresh tomatoes; L - burger & onions in a roll; D - lamb leg steak traybake

    That's a lot of the veg in the fridge used up.  Won't be much left in there apart from some carrots but if I can fit them in the traybake I may well use them all so we can have some of the roasted veg stirred through some couscous during the week.

    Only back to report that the jam sponge I made to use up the jam was pretty epic. So light and fluffy and everyone actually liked it (nothing short of amazing). Will definitely be making that again!

    I love a simple cake like jam sponge @QueenJess so I’ll add that to my list. 
    We’ve made mini egg blondies today on account of them being the feature for April on bbcgf calendar on the wall but literally needed the mini eggs and white chocolate so pleased to have not spent much. 

    The mini eggs were purchased to make some cornflake cakes with my 20 month old. It worked out great, until the child who has the teeny tiniest amount of sugar shovelled a fist size amount into her mouth so she’s still awake now when she would usually be getting ready for bed 🤪 

    leftover polenta fried off with cooked breakfast this morning, veggie sausages, tinned tomatoes, toast, poached egg and nice addition of some white sprouting from the garden. 

    Pulled pork tonight and hub just wanted a tin of pineapple to add to the sauce he was making so I think he’s finally getting his head around this not spending lark!!!

    Using the last of a pack of sausages for breakfast; lunch will be some pureed peas with the last of a bag of scallops from the freezer followed by some cheese on toast.

    Dinner tonight will be a chickpea and butternut squash from the freezer with some rice and a couple of HM samosas, again from the freezer.

    It's good to be able to use up so much freezer stuff, some of which has been in there for months.  I would really like to get the outside freezer emptied so that I can defrost it and turn it off when we go away for a month in the motorhome later on this summer but whether this will happen is another matter of course!

    I still have what can only be described as a silly amount of food- every cupboard is rammed full and the freezer has absolutely no space left. Reverse meal planning for the rest of the month for me to try and get it all down and hopefully spend very little!

    Mainly planning around the fridge (fresh veg) as it’s the first to go off. Today’s lunch will be leek, pea and cheese orzotto followed by yogurt and fruit. Dinner will be a chicken roast using leftover cooked chicken from the freezer, hm Yorkshire puddings (also from the freezer), roast pots, carrots, parsnips and spring greens. Pudding is more of the jam sponge with ice cream.

    I also plan to make a wild garlic and spinach pasta for Monday and Tuesdays lunches today for me to take out with me. Uses up the garlic and means no spending on lunches for me. Will also defrost some muffins from the freezer as a treat pudding.

    One pack of prawns out the freezer, two packs of prawns in  :D no wonder I never run the freezers down!

    Two TGTG bags last night, one from a new place.  Now stocked up on salad an got veggies for roast today, doing roast beef for OH and as it's a large joint will save the rest for Wednesday when my parents are coming to visit.

    Got four garlic bread pizzas to try and fit in a freezer now!

    Your simple cake recipe reminded me of the 2-minute microwave puddings that Jumblejack posted, back in 2012 on the grocery forum. They are still there with other 2 minute microwave options (top of post 5 on screen 1 of any monthly grocery challenge) and simple cake recipes - here's the one though. I have made the chocolate pudding. I painted the inside of the jug I used with veg oil so it was easier to clean!

    That reminds me that I was going to make a mug cake in the microwave as an activity for DS this week.  Thought it would be both fun and practical!
