QueenJess, I want to make flapjacks - do you have a recipe you can recommend?

Scored well on Olio last night (sandwich for me, two wraps for OH - only requested one but got given two - falafels for the freezer, chicken slices for the freezer and the bonus of two tubs of tomato and basil salad.  So that's today's food sorted!  Running club tonight so will have something light around 4.00 and then eat again when I get home at 7.30 / 8.00.

We've had some thai red curry paste sitting in the fridge for a while so in a bid to use it up, we're having a thai curry tonight.  DH is not a massive fan of the usual baby corn / mange tout mix for this type of curry so instead I'm chucking in the last of the frozen green beans, butternut squash and sweet potato along with some chicken thighs I picked up at the weekend.  Should make enough for 3 or 4 portions so we'll have some leftovers that can be eaten at the weekend as DH is out Friday night and I'm out on Saturday night.

Our taste buds tend to find traditional flapjacks too sticky and sickly for our tastes and so we find alternatives.  The one I make for DH just has egg, honey and a very small amount of butter to stick the flapjacks together with lots of dried fruit.  I can't post the recipe for that one as it's from one of the Ella's kitchen books and it isn't online anywhere.
The other one I use is for DS and has banana to reduce the sugar content.  I replace the raisins with chocolate for him.  The recipe is here.
If you want traditional flapjacks there are recipes everywhere!  BBC Good Food is quite reliable for recipes.  I did make Jack Monroe's ones the other day which were nice, but a bit too sickly for me.

@QueenJess you could take a camera-phone picture of the Ella recipe and post it on here

Ruby you've reminded me that we have a truly ancient jar of red curry paste lurking in the fridge - I periodically remember it and have a little attack on it then it gets forgotten again and returns to sulking at the back of a shelf. I can use a spoonful of it as the "spice" for my quick chicken and butternut curry tonight though so thank you for that! That fairly large squash turned out to have a sizeable seed cavity so not quite as much flesh as expected, but it still did a plentiful amount for having with couscous last night and the remainder in the curry tonight. We scoffed all three (fairly small) roasted beetroot last night in the event as well in a totally veggie-packed meal. Tonight's curry will see off the remaining two chicken thighs and two drumsticks, one of the onions and a tin of tomatoes from the cupboard, and the final piece of a creamed coconut block.

Have got some of the gammon joint left so will have that tonight with some HM chips using up some of the sprouts potatoes.  Will have with some baked beans from the cupboard.

There should be a few slices left after that which we'll have in sandwiches for lunch tomorrow.

Just need DH to get out the slicer and slice the rest up.

I'm hoping there will be enough bits left to make a ham and pea soup for the freezer (not needed for the meal plan this week).

We had a 'birthday' treat on Monday - ribeye steak. The steaks were quite large so I cut a bit off each one which we had tonight - in years gone by I think I would have treated the dogs but not anymore considering its price!
Pudding was the remainder of the HM 'Death by Chocolate' cake - it's now back to getting on the scales in the morning and plain living.
