I made a chicken curry yesterday which we had with a naan bread. Tonight will be the rest of the curry with rice. Think we might have another naan as well as there isn't quite as much curry for tonight!

Slow cooker on with a large bag of casserole veg, pack of mushrooms and a pack of quorn cocktail sausages out of the freezer. Was pondering what protein to include when I remembered the quorn sausages. Chucked in with a meat-free oxo cube, hendersons relish, herbs and tomato puree - should do 3 portions I would think. Really do need to keep grocery spends down so will be shopping out the freezer for the next month.
Thinking I might make mushroom soup for lunch - need to go out to collect my cat from the vets at lunchtime which is an hour round trip plus time to speak to the vet so will have to eat at my desk.
Suffolk_Lass I really fancy cauliflower cheese now! We had loads of purple caulis a while ago from Olio and make cauliflower and pasta cheese which OH sees as a meal, whereas cauli cheese he considers a side dish. I used to love cauli cheese with a gammon or bacon steak when I ate meat.4 -

Probably my favourite "baked" type meal is cauliflower and pasta cheese with some lardons of bacon thrown into the sauce to cook. It also works well I discovered recently with little chunks of chorizo. Hearty, filling, not as dense as just a macaroni cheese can be, and with little pops of added flavour from the bacon or chorizo which is used almost as a seasoning. Yum.
I did indeed as planned roast the tray of assorted veggies while the oven was on last night - they'll now just quickly reheat on the hob with some chickpeas tonight and I can probably use the same pan for cooking the halloumi that will be going with it.
I need to do some freezer-raiding tonight or tomorrow to see what we can eat tomorrow evening (although we may give ourselves the green light for a takeaway) as well as getting out some bits for the weekend. A tub of parsnip and squash soup will be emerging for Saturday lunch, and that lamb shoulder (or possibly the breast of lamb) for Sunday. there is actually starting to be some space in there again at least which is helpful. Also need to plan out meals for next week - and a shopping list. We're away for a while shortly so I'm keen to factor in using as much of the stuff we already have in the fridge/fresh stuff in the larder as I can. The butternut squash and some of the remaining onions may make their way into a curry I think then I can portion up and freeze that.

My husband would also say the same about cauli cheese being a side dish but wouldn’t with pasta.He wants the oven on tonight for a pizza whilst I’m out so I’ve made a raspberry loaf cake to go in at the same time and now contemplating making cauliflower cheese pasta bake as another fill up the oven dish. Although I’m certain we have approx 20g of cheese left and I wasn’t going to replace it this side of the weekend! I do have cream cheese which I could stir through but with no chorizo or bacon, It seems I’m quite short on the required ingredients. Except the cauliflower of course 😂
left over fajita mix in to a left over pitta for lunch with half a sliced tomorrow, a teeny bit of afore mentioned cheese and a dollop of sour cream. LO sausage casserole for dinner tonight for me, chicken and mushroom risotto for OH.
Had overnight oats for breakfast - have a large bag which is OOD so need to use them up.
Lunch will probably be soup and salad, although I have a bag of stir fry veg to use up so might do that instead. Made mushroom pasta yesterday (with soft cheese with black pepper) which was lovely - don't have pasta very often but it was a nice change.

A friend was coming over to visit today, she's lovely but does rather outstay her welcome - no sense of time. I thought I'd invite her to stay to lunch as it would be easier at the end of lunch to mention we had to get on with our jobs.
I got a gammon joint out of the freezer, defrosted it and cooked it ready for toasted sandwiches. My other half just happened to say 'I think she's a vegetarian' - a polite one as she devoured my sausage rolls near Christmas.
Rethink - scrambled egg on toast - brown of course - with a couple of slices of smoked salmon on top which was meant for Monday as part of a starter as it's someone's birthday. - need another rethink for Monday but at least I've enough cooked gammon to have tonight plus plenty for tomorrow and will freeze the remainder.1 -
I’m sure you friend would have appreciated the addition of smoked salmon!
I managed to find a small round of camambert lurking in the freezer so chopped that up along with some sautéed veg for the take on Mac and cheese which is for tonight’s dinner.
