    Your simple cake recipe reminded me of the 2-minute microwave puddings that Jumblejack posted, back in 2012 on the grocery forum. They are still there with other 2 minute microwave options (top of post 5 on screen 1 of any monthly grocery challenge) and simple cake recipes - here's the one though. I have made the chocolate pudding. I painted the inside of the jug I used with veg oil so it was easier to clean!

    Had a productive food prep day yesterday to use up the vegetables from last week ready for meals this week / the freezer:

    - Pasta sauce now in the freezer, made by roasting the last of the cherry tomatoes with some feta and blended together with some veg stock
    - 2 mini fish pies using up a leek and light cream cheese in the sauce and topped with mash that had some leftover butternut squash and sweet potato mixed in.  Will serve with the leftover green beans and tenderstem broccoli for dinner for myself on Tuesday and Thursday
    - Chopped up all the leftover carrot, courgette and onion to make vegetable pancakes for my lunches this week which will be quick and easy to assemble as and when and will chuck in some chopped cabbage from the freezer too.
    - Garlic Spinach to have as a side with the veg pancakes

    Phew.  Managed to do all of that while cooking dinner last night as well so for the bits that needed cooking, I just took advantage of already having the oven and hob on so should cut down on the amount of energy used 👍

    Today I'm having the last of the pork stir fry thing I batch made last week for lunch and dinner is stuffed peppers as requested by DH.

    Used up the last of a pack of bacon in a sandwich for breakfast.  Dinner tonight will be a beef stew from the freezer.  We'll have it with some mash & green veg from freezer.

    Cheese salad sandwich for lunch today and sausage mash and HG white sprouting for dinner. 

    Freezer sausages, the sproutiest spuds I’ve ever seen and veg from the garden so pleased with that. Only 4 small sprouty spuds to go before moving on to the next lot (that are a little fresher!)

    Sixth Anniversary 1,000 Posts Name Dropper
    Freezer / party food for lunch - garlic bread, chicken popcorn for OH, breaded fake chicken breast for me with chips and sesame prawn toast (randomly) so not very hungry this evening.  Just had salad with cheese and hummus, OH will probably have toast later.  Must put a loaf on!  Did well though as OH was dropping very unsubtle hints about takeaway for lunch - saved money and used some bits up out the freezer.

    Booked an early exercise class and got my Olio collection first thing so going to make overnight oats for an easy breakfast when I get back.  Got a lot of oats to use up!  Still need to make flapjacks, might do that tomorrow so I can give my parents some to take home on Wednesday.

    Used up the last of the mushrooms as part of breakfast this morning along with some HM hash browns that I made last night, lunch is going to be veggie pancakes using the veg I prepped at the weekend and then dinner is one of my home made fish pies from the weekend.  All the prep has made things so much easier already this week.

    It's definitely sprouty potato season here too. In double bags, in dark larder and they could be better than the seed potatoes we planted!!

    Have taken some chicken thighs out of the freezer so we'll be having Fakeaway KFC, frozen chips, frozen corn on the cob an some beans!  So again all things which we already have.

    Lunch will be scrambled eggs on toast which will use up the last of the old eggs.  Bought new ones today for the coming week.

    Busy this morning and when I came in for lunch realised I'd no biscuits/cake in the house so quickly had to make some biscuits. They were so short they fell apart  - not a success. Neither of us were hungry at teatime so made do with some LO pate on toast, angel delight and a bit of ice-cream. I actually washed the dishes by hand today as there were so few. - sad life  :)
