Hello everyone.
Delurking for the first time.
I ought to introduce myself, we are a family of 5, although son away at uni quite a lot. No dietary requirements, although we have a slightly fussy youngest daughter.
We have well stocked freezer and cupboard supplies, but about to have a big drop in income. Your posts inspire me to eat from our stores, but I thought posting myself may help me stay more focussed.
So today has been left overs from Easter roast for husband, and various other leftovers for the rest of us.
Tomorrow's dinner will be homemade potato wedges and chicken kievs from the freezer for all bar me, and I will finish up some leftover fish pie and veggies.
Years ago a really tough spell left me unable to bring myself to dish up every thing I cooked at meal times, always putting a little back for tomorrow. This habit has been difficult/impossible to shake, so we always have lots of pots of random bits in the freezer, which I am happy to mix and match. Lack of labelling means I do play freezer jeopardy quite often though 😁
Anyway, thanks for all the inspiration and ideas.

Using up leftover roast chicken in salad for lunches this week - all prepped and ready to just pull out of the fridge. Picked a few things in the fridge which need using up and then looked for recipes. So tonight is salmon, leek and creme fraiche traybake with extra veg on the side (purple sprouting broccoli and cauliflower).I'm also looking for pitta bread inspiration as I seem to have loads in the freezer despite never really eating it.. I could make mini pizzas on it and the usual sandwich/with hummus etc. Any better suggestions? @v1ckyt I am so guilty of putting leftovers in fridge and this drives my husband mad. But I always find something to plonk them into. I never have anything to put in scraps bin that council collect apart from egg shells and t bags. With pitta bread I put it in toaster like bread and have for breakfast. Sometimes i fry in pan with egg in it,like runny egg sandwich.21k savings no debt2

After a really rough weekend, we finally had the oxtail stew last night with mash and it was delicious.Leftover mash with something tonight, I quite fancy sausages but I think there is only meat free and I don’t fancy that.I have a meal plan but it’s not written down like usual and this weekend has really put pay to all food related plans so probably should revise it.Pitta breads for us go with everything.
