    Using up leftover roast chicken in salad for lunches this week - all prepped and ready to just pull out of the fridge.  Dinner tonight is the leftover thai red curry I froze a couple of weeks ago with added leftover veg from the weekend and served with some steamed rice.

    Picked a few things in the fridge which need using up and then looked for recipes.  So tonight is salmon, leek and creme fraiche traybake with extra veg on the side (purple sprouting broccoli and cauliflower).
    I'm also looking for pitta bread inspiration as I seem to have loads in the freezer despite never really eating it..  I could make mini pizzas on it and the usual sandwich/with hummus etc.  Any better suggestions?  We used some up today for lunch with a cheese and carrot filling.

    How about roasting some veg to put into the pitta along with some hummus?

    The traybake sounds lovely.  Hope it's as good as it sounds.

    Ooh yes, what a good idea. I have some nice spices that could work as well.

    The traybake worked out well thank you! Bit of a miracle really as I’ve had les than 3 hours sleep and am walking around like a zombie.. in case anyone is interested, I adapted the recipe a bit from here: https://www.bbcgoodfood.com/recipes/creamy-salmon-leek-potato-traybake

    I used crème fraiche and didn’t bother boiling the pots and threw them in the oven first for a bit.

    @v1ckyt I am so guilty of putting leftovers in fridge and this drives my husband mad.  But I always find something to plonk them into. I never have anything to put in scraps bin that council collect apart from egg shells and t bags. With pitta bread I put it in toaster like bread and have for breakfast.  Sometimes i fry in pan with egg in it,like runny egg sandwich.

    After a really rough weekend, we finally had the oxtail stew last night with mash and it was delicious. 

    Leftover mash with something tonight, I quite fancy sausages but I think there is only meat free and I don’t fancy that. 

    I have a meal plan but it’s not written down like usual and this weekend has really put pay to all food related plans so probably should revise it. 

    Pitta breads for us go with everything. I have them with breakfast (eggs like someone else suggested) but I also have them with soup, stuffed with whatever I can find, eaten plain as a snack with hummous too. 

    Need to work out the fridge today so will be back later to update

    Dinner tonight is Carbonara to use up some of the eggs in the house before they go off on Friday along with some bacon leftover from the weekend.

    Carbonara is a great shout, I will be adding this to tomorrows meal plan as we have lots of eggs and I’ve just got some ham out of the freezer!

    Raided the fridge again for lunch and made garlic mushrooms on toast using wild garlic, crème fraiche and chives from the garden. Still got crème fraiche left to use up - that stuff never seems to end!
