Got out a couple of big chicken breasts yesterday and made sweet and sour chicken for dinner tonight and a butter chicken for Saturday night while we're away in the motorhome. Other meals will be HM ready meals from the freezer.
I've made up a teryaki sauce and will use that with some salmon fillets for dinner tomorrow night with some stir fried veg and noodles.

Change of plan for Saturday night as DH picked up steak so we’ll have that now. The chicken curry is in the freezer for some time next month.3

The fridge has yielded, one ball of minced pork with the herbs to make the outer casing of a scotch egg, some left over pork mince with a golden delicious apple chopped through it that I used to make some sausage rolls and some left over sage stuffing from the chicken last night.
Also found a packet of back bacon. So tonight's tea will be individual bits of the above wrapped in a slice of bacon. Should be enough for tonight plus leftovers for the day after.
Does anyone else seem to exist on leftovers?4 -
@zafiro1984 - yes constantly! For example today we've had a chickpea and butternut squash tagine from the freezer with some herby couscous; tonight will be lamb neck casserole also from the freezer with mash & green beans/peas from the freezer.
Tomorrow night will be a cottage pie topped with swede and carrot mash with everything coming from the freezer!
Probably about 70% of May's meals will be from the freezer or something made with meat from the freezer (some of which will end up back in the freezer once cooked as another HM ready meal!).

JMs peach and chickpea curry didn’t go down very well in our house tonight. I’ve been meaning to make it for ages however not for around to it (and burnt the chickpeas to the pan last week as I forgot they were on!). Hub said next time can you add chicken and make it taste of something 🙃 eeeeeeeeish!JMs best ever nut burgers were on the menu tomorrow but I’m not sure about it now!Anyway, I’ll probably make use of the oven tomorrow as there are some plums due to be used which will maybe go into a crumble so something baked would probably be better and it’s not like the nuts or any other recipe ingredients for the burgers will go off anytime soon!Follow here for the daily life of an ADHD mum with 2 children and a new mortgage to pay

YS potato gratin, with ys fish cakes and ys sausages for the kids here tonight, all from the freezer, I sense a theme
Rest of this week will be lamb shank and mash, chicken burgers and mash for the kids, and homemade soup all from the freezer. Just need some milk and fruit but should get to the weekend with very little needing buying, all being well.5 -

I got some sausages out of the freezer yesterday plus some chopped goat. So tonight's dinner is going to be sausage and pasta which will use up another tin of tomatoes from the cupboard plus the usual onion, garlic and a bit of chilli paste.
I'm currently cooking a goat curry with has used up another couple of tins of tomatoes, onion, garlic and ginger, all from stores. This will do dinner tomorrow night which we'll have with some wild and basmati rice, a mint and cumber riata and maybe a mini naan (if I have any left in the freezer as don't want to go shopping again!). I'll probably add a bit of frozen spinach to it when I reheat it for a bit of extra colour.
