Never heard of Duchess potatoes, popped off to Google and now I want them! They sound delicious @joedenise
It's the first time I've done them, just hope they reheat OK after being frozen.  Will know later!

    Hope they were nice @joedenise

chicken tikka sandwich filler, pittas, chili, roasted veg and an (orange) freezer surprise out of the freezer today for tomorrow.

Sone weird pancakes this morning from flour and a way past date egg for breakfast, broccoli pesto tagliatelle for lunch (half head of broccoli, 2 dinky old potatoes, half a jar of pesto from the fridge and half a pack of fresh pasta from the freezer) and off to a friends for dinner so happy to have used up home supplies rather than purchasing anything!

@MissRikkiC - the duchess potatoes were very nice but next time I'll reheat them at a slightly lower temperature for a longer as they were a bit burnt in places on the outside but not as hot as I would have liked in the middle.

Just sorted out the vegetables for the next two days of dinners. Literally using the dregs from the fridge. I think everything apart from a bit of purple cabbage and half a swede will be used up before Thursday when I get my new veg box.

Tomorrow is a chicken thigh slow cooker casserole with a mustard sauce. Includes cauliflower stem, purple carrots, broccoli stem, kale stems, leeks with swede and pot mash.

Tuesday is teriyaki salmon stir fry with purple carrots, sweetcorn, kale, broccoli and cauliflower stems, cauliflower leaves, mushrooms and red cabbage.

Apart from noted above it just leaves salad being used up in cream cheese and salmon bagels for tomorrows lunch, leek and potato to be made into soup for lunches and also some cherry toms, onion and mushrooms to add to a cheese omelette for Tuesdays lunch. Brings me all up to Thursday and my new veg/fruit box.

I agree with rtandon27, well done @QueenJess - I especially like the inclusion of cauliflower stalk and leaves - I always use them (DH snacks them while prepping!).

Well my update is limited because I was fasting for all of Saturday so DH had the chicken curry we brought home from my cousin's on Boxing Day and I had water and black tea. After the medical procedure I went straight to bed for a couple of hours with a hot water bottle and so DH cooked for me. Three previously frozen crumpets with gifted marmalade when I got up and we both had macaroni cheese for supper. I'm not allowed to drive yet but will need to go to two local towns today as I have a prescription to collect and a replacement filter jug in the opposite direction (best price was from JL!). Tonight I will cook the mince into stuffed peppers and hopefully if I pad out the ragout with red lentils and celery, I will have enough for a pasta dish tomorrow. I have meetings two nights and DH on a third this week so all meals will be easy and quick to deliver

Carbonara tonight which just uses stuff from the cupboards and some bacon lardons from the freezer.  I've also got some parmasan in the freezer so can have a bit of that on the top as well.  I've got a couple of pieces in there as started a new one thinking I hadn't got any left then when I sorted out the freezer before Christmas came across the old piece!  Never mind it will all get used as it grates beautifully from frozen!

Our dinner tonight is a simple one - gnocchi with lardons, leek & mushrooms - we have a couple of tetrapak creamy sauces so will pick either cheese or truffle to coat.  It's meant to be meat free Monday, but we're just going to overlook the lardons and pretend it is!

Freezer chili and roasted veg from the freezer for us today with some rice and sour cream (still got some left!)

Orange freezer surprise for me was a curry type thing of some kind so left it for Hub tomorrow as anything spicy is giving me awful heartburn at the moment.

Instead I had tuna Mayo, half a tub of cottage cheese, the last egg and half a wrinkled red pepper in 2 freezer pitta breads. Pleased to shopping from stores again!

Change of plans as DS coming today instead of yesterday, we had avocado and cheese salad followed by the remains of the accidentally bought fat-free Greek-style yogurt (bit watery) with mini pots of strawberry jam (from our cafe trip last week), the teacakes come with Tiptree company mini pots that we paid for so they came home in my handbag!

Pasta bake tonight and stuffed peppers tomorrow now
