We're having LO carbonara from last night for lunch today. Tonight is a sausage and bean casserole from the freezer.

Lunch was jacket potatoes from the freezer with tuna (me) and cheese and beans (OH). Starting first mist coat on our newly plastered bedroom tonight so easy dinner of pasta with leeks (quite old and need using up), mushrooms (Olio) and blue cheese.1

You've reminded me, we need to harvest some leeks. They are almost the only things in the garden (there are a few beetroot too that I might roast and then make soup with (Borscht)Save £12k in 2025 #2 I am at £4863.32 out of £6000 after May (81.05%)

I'm not a fan of beetroot but I do like Borscht. I've got a huge beetroot in the fridge (from the veg box) so I might give that a go - minus the steak!1

A chuck together of a packet of cooking bacon, a few potatoes, an onion, a tub of OOD ricotta and a half jar of roasted red peppers that had been in the fridge for a couple of months. And a stock cube.

Olio sausages and part baked rolls for dinner for us along with 6 sweet potato fries from the freezer. Yep 6, we had 3 each 😂 can only assume I didn’t want to waste them at the time or fatten us up either! Tinned rice pudding for pud.Our kitchen is due be torn out and replaced come Monday so tonight I used up the ingredients I said I would to make cottage pie (mash top to be done tomorrow and baked) along with making sausage and bean stew for the freezer for next week.We still have a few wrinkled items but they will go into recipes tomorrow or Thursday although I may cook all of those meals planned (mushroom and spinach Pearl barley risotto, mixed bean goulash) tomorrow so that I can shop Thursday and make some more batch cook items come Thursday night. Morning all. Raided the freezer for some soup for lunch today (lentil and vegetable) and dinner is going to be jacket potatoes with cheese and beans and salad on the side. I need to get back on this bus! Shamefully although I have food for the week it not in the form of any sort of meal plan - just "things to be eaten" - oops!
Might well do the haggis tonight mind, along with bashed neeps (two small and slightly wrinkly ones from the last veg box) and the customary mashed tatties of course. I've got sprouts that need using so will do some of those to go with. Relatively quick - the only downside is the washing up involved. (And yes - I know it's a day late but we were out last night and disappointingly the pub we ate in didn't offer a Burns night option!)
I have half a pack of bacon that needs cutting into lardons and frying off to freeze - can't freeze it as-is because it came out of the freezer to use on Monday evening!
MrEH portioned up the black and white puddings we brought back from Scotland earlier in the month so they are now in the freezer.
I bought a huge chunk of pork shoulder for a bargain price in Mozzas on Sunday - that's been roasted but a job for tonight is to portion up and then freeze that in portion sized packages I think. Also got a good sized bag of wonky pointy peppers so those might need roasting and freezing too.
