    I have also frozen half a tin of chickpeas - I simply drain and rinse then pop them in a re-use takeaway box and they stack really well in the narrow drawer of the freezer. I think adding our ideas about low energy cooking to this thread will be really useful, as I am sure we are all thinking about our energy consumption. If you do start one please add a link and I will edit the first post to add it.

    Using a pressure cooker, as @joedenise suggests is really energy efficient, and I always use mine to cook lentils and pulses. On the other hand, we use the heat from our aga instead of central heating a lot of the time, and it is on all the time, so we do stick stuff in overnight, very like a slow cooker but using cast iron enamelled pans and enjoying the burned on crunchy bits that DH refers to as one of the main food groups. Talk of a stew has made me think we might have to cook the shin of beef I bought this week, instead of the mince based supper I had planned for this evening (stuffed peppers)

    Definitely a use up day today.  Lunch will be wraps from the freezer with a bit of grated cheese and the rest of the coleslaw from the fridge all heated up (was yummy when I tried it yesterday).
    Dinner will be leftover cooked xmas turkey, red cabbage and yorkshire puddings (all from the freezer), the roasted veg from the fridge (did a big batch early in the week) and will just add roasted potatoes.  Pudding will be the last of the chocolate birthday cake from Monday.
    Planned the next 6 days around using up all the veg from the fridge/other fresh stuff before I get my next veg box delivery (next Thurs).

    Edit: Got some banana and coconut puree which DD didn't want for pudding today, so I quickly searched online and will turn it into a pancake for DS's pudding (along with banana and chocolate sauce).  Nothing being thrown out today!

    I'm going to make the leftover stew from last night into a pie for this evening. Then tomorrow I am fasting so DH will discreetly eat what he likes! Sunday will be the stuffed peppers if I am up to cooking, or something else if not!

    We had stuffed mushrooms this morning and I made far too much stuffing so it will be LO stuffing (couscous, various veg, minced beef).  Will probably have it with a fried egg.

    Tonight I am making takeaway KFC using some thighs from the freezer, half tin baked beans from the fridge, corn on the cob from freezer and a couple of baking potatoes as chips which are beginning to sprout!

    Last night's dinner was OH's choice for his birthday - pork chops, stuffed portabello mushrooms, steamed brussels & carrots with oven chips on the side.  We have two mushrooms left to go with dinner today & both brussels and carrots to have alongside our Sunday pot roast chicken.

    Breakfast today was a standard of buttered toasted bagels - I had some dinner leftovers on the side and OH did ham and cheese - simple & low effort.  OH had made dough for a batch of flatbreads as we had yogurt & self-raising flour that needed using up so we seem to be  managing our stores pretty well at the moment.

    Lunch today will be freezer dive - which seems to have produced a box of bao buns stuffed with pork - YUM - I'd forgotten these were there!

    Using up the pack of fake mince along with some baby potatoes to make keema curry - I've got some asparagus and purple sprouting broccoli which needs using up so will serve that with it.

    A few aubergines to use up so that will be miso aubergines with tofu and the last of a bag of spinach over the weekend.  Got loads of mushroom pies in the freezer (YS) so may have one of those for Sunday lunch and roast the whole chicken which is in the freezer for OH.

    More things to use up today. DS and DD are working their way through the pancakes for breakfasts which uses up the banana and coconut purée that DD was a bit indifferent to.

    I made a soda bread with a pot of yogurt which was going off. Lunch was pesto pasta with the last of the pesto from the fridge, a pack of ood cherry tomatoes, mushrooms and a pile of kale.

    Dinner will help use up some of the eggs I have - so veggie sausage toad in the hole with the last of the veg I roasted at the start of the week and supplemented by the last of the cauliflower.
