Using up loads of veg from the veg box today. Lunch was the last of the spicy parsnip soup. Dinner tonight was a white lasagna, using up 1/2 of the lasagna sheets lurking in the stores! OH is not fond of tomato based sauces so minimal tomato in this one, using a carton of béchamel sauce instead and low fat cheese instead. Filling was a mix of leeks, (hidden) aubergine, spinach, pork mince, herby seasoning & 2 tbsp. tomato puree concentrate with a layer of cottage cheese as well.
OH said is wasn't bad and finished his whole plate - not bad for a dish with disguised aubergine! Good thing too as we have another 4 servings left - 2 for the freezer and 2 in the fridge for another meal this week.4 YEARS 10 MONTHS DEBT FREE!!! Spent the weekend at the parents so fridge is looking rather bare as we usually do a food shop on a Sunday. Although saying that we're going to have a day of meals from what we have and then shop later on this evening. Lunch is some stir fired noodles, using a packet that DH picked up last week that I'm bulking out with the last of the beansprouts, a pepper and some edamame beans that were in the freezer. Dinner are sausages and green beans from the freezer with mash and gravy.

Another who needs to go shopping so today's dinner will be from the freezer plus bits from fridge - chicken chasseur with mustard mash. Will be going shopping tomorrow as will be completely out of mushrooms, already out of tomatoes. Only veg left is a couple of sticks of celery, half a swede, half a cabbage and a pepper.2

OH is fasting today so he will a small portion of pasta for lunch and omelette for dinner - easy to plan!
I will have remainder of potato pie (was okay but not a keeper for the meal plan) with the other half a pack of runner beans and some cabbage to use up the mountain we seem to have.
Tomorrow will be kebabs - I have a pack of sharwarmi kebab in the freezer and will use a pack of beef mince for OH and use up some greek flatbreads from Olio collection. Served with homemade chips.
Wednesday OH will be fasting again so pasta for lunch and chicken & veg for dinner. I have a pack of fake mince in the fridge so may do a bolognaise / chilli / keema curry with that.
Thursday will be mushroom risotto to use up some posh mushrooms I got from the greengrocers.
Friday - not sure yet but I'm pretty impressed I have managed to meal plan for the next four days!2 -
Well so much for being organised this week, just looked at the whiteboard sheet on the front of the fridge and I had forgotten I picked up some stir fry veg from Olio so tonight will be stir fry (maybe red curry with tofu) and Wednesday will be potato pie. Veggie mince will go in freezer.
At least I have a plan and didn't forget the stir fry veg so posting on here and using the whiteboard is definitely working!3 -
So the chicken portions bought yesterday were roasted - and I also roasted some veg for later in the week and the potatoes and parsnips for the roast dinner at the same time to maximise oven use! The veg box was mostly what we expected - our celery substitution was chinese leaf so the rest of the chicken will be shredded and go into a stir fry I think for tonight. The rest of the meal plan will largely stand as-is I think, tomorrow being couscous salad with roast veg and halloumi, and wednesday will be pasta with the cooked chicken sausages from the freezer and more veg. Can't remember Thursday off-hand...🎉 MORTGAGE FREE (First time!) 30/09/2016 🎉 And now we go again…New mortgage taken 01/09/23 🏡

I bought four frozen salmon fillets today, ready to do something someone else suggested, if I get round to it. With the purchase of a fresh baguette in the butcher's and a lettuce we are having a (very) late lunch of bread with pate and lettuce. Lunch today was a slice of freshly cooked gammon and some leftover mash with kale and carrots. We lucked out with two small clearance xmas gammons which are much nicer than pre-sliced sandwich ham - and cheaper per kg due to being on sale
I'm loving getting a weekly delivery again - we find there it much easier to meal plan & keep well under budget than doing one big monthly shop - also means i think more about using up items from our stores.
Dinner tonight will be tortellini pasta with leeks, mushroom & cream sauce - quick and easy for a meatless Monday!4 YEARS 10 MONTHS DEBT FREE!!!
