Well the cassoulet didn't cook in time for dinner yesterday so we ended up with a LO roast pork and apple sauce sandwich which we both really enjoyed.  Continued to cook the cassoulet for an extra hour to finish the cooking so will be reheating some of that for tonight and the rest will be bagged up to go in the freezer - there should be at least 2 if not 4 portions to freeze.  I ended up having to use the largest cast iron dutch oven I've got!  I couldn't even lift it in and out of the oven so DH had to!

Have got some smoked haddock and ham out of the freezer so it's kedgeree for breakfast and either ham salad or ham and tomato sandwich for lunch.

Actually ended up with 6 portions to freeze!  Really happy with that as it used up stuff from the fridge and the meat I used were from a pack I brought back from France just after Christmas which cost less than £5 which included a good sized piece of gammon and a couple of spicy sausages.  I also added a thick slice from our roast pork joint.  I think it worked out at less than £1 a portion - and they were good sized portions too.  We were both full up after a bowlful!

The goal today was to use up some of the oldest veg/fruit and the small amount of creme fraiche left.  Lunch was a spicy parsnip soup.  Dinner will be pesto pasta with cherry toms, mushrooms, red pepper and salad.  Pudding is orange drizzle muffins (from freezer) with creme fraiche.

We seem to have ended up with a fridge full of bits and pieces of other dinners!  May just have to ignore the meal plan for the next few lunches & eat whatever needs using up!

OH had his usual standby of an omelette in a wrap for breakfast & mine was a boiled egg and sourdough toast with butter and jam.  Cups of steaming hot coffee on the side which warmed us up nicely after another chilly frosty early morning!  Lunch for me was a chicken drumstick, followed by some stir-fried mince and cabbage on a slice of buttered brown bread - very random but filled a hole & used up some of the bitty bits.  Dinner tonight will be gussied up store bought pizza bases - salami, onions & olives - chased up by crackers or a baguette and xmas cheese with some fruit on the side.

Sesame tofu tonight (didn't have it the other day) to use up the last of an open block of tofu and whatever veg I can find to stir fry with it. Tomorrow will be potato and blue cheese pie with some filo pastry I bought recently.

I also bought a block of halloumi for a very specific recipe and now can't remember which one so off to read through the cookery books and probably find loads of other recipes I want to try with ingredients I don't have!

I've often done that @C@CCW007 so now I write on my menu plan where I found the recipe - saves that looking through several cookery books and still not finding it because it's actually on someone's blog!

Lovely food being planned and eaten here!

We’re sticking with the takeaway option still for tonight - I’ve not planned anything else and although I wouldn’t say I’ve got side effects from the booster as such I am feeling a bit “not quite right” if that makes sense.  I think MrEH plans to nip to the Chinese takeaway for one of their set meal options which is always delicious!

I’ve got a loaf on the go in the bread maker- and the plan for tomorrow is to eat things we already have - I’m intending toast for breakfast - Mr EH will be out at lunchtime as he has a rugby match but I’ll probably have scrambled eggs and toast (yes, again, can’t have too much toast! ) possibly with two random bits of black pudding that need using. Tea will likely be cheese and crackers.

We’re freezer auditing this evening, then I can meal plan and start making some space!

Freezer audit was done - one result of which was that I chose to eat the last two random fish fingers for my lunch yesterday alongside the scrambled eggs.

Veg box has arrived overnight although we’ve not looked in it as yet. The meal plan takes account of a little ambiguity to use the contents but there may be a few small tweaks when we confirm what’s in there. Once again we have lettuce I believe, slightly irritating st this time of year but hopefully I’ll be able to persuade MrEH to just shove it into lunchtime rolls.

The main thing the meal plan focuses on this week is using up some oddments of home-frozen veg - the last of our courgettes, a batch of roasted tomatoes, and the roast beetroot from before Christmas,  I also took some milk out last night to defrost. Planning to buy chicken for lunch, which will also provide tea for tomorrow evening.

Plan to have potato and blue cheese pie was scuppered yesterday by being too busy all day (recorded 22,000 steps!) so we ended up with a cheeky chip supper instead which was great.  We were both disappointed by the portion size but after we'd eaten agreed that it was probably about right.

So potato and blue cheese pie today - I've just done my Olio collection and there were some runner beans so we'll have those and do carrots and peas as well.  I have frozen the YS whole chicken I picked up for OH's dinner today and will do that next weekend instead.

Plan today is to batch cook carrot soup and then dehydrate whatever carrots are left.

Ooh lettuce - must add it to my list - very popular in lunchtime sandwiches here. I shall need eggs too as my local eggs are still MIA after the flock went into moult. I do know of a front gate seller about 2 miles from here but I may also try some from the SM. None are properly FR with bird-flu rife in the East. I will need to shop tomorrow (first proper shop this month). Meanwhile we have roast shoulder of pork today. Last night I stirred some cooked penne through the leftover ragu and then banged it in a dish covered in cheese sauce and a sprinkle of parmesan on top - really yummy and a portion in a take-away box for DS when he comes
