Love joints of gammon. Some can be a little salty but we soak in cold water overnight and then pressure cook the. The water in whixh they cook makes lovely stock, especially for any soup using lentils or split peas.1

I always make my lentil soups with gammon / ham stock where I can, just adds so much warming flavour to it.
Visit to the supermarket last night to set us up for the week and didn't really need a lot which was nice. Decided to make a tray bake with some of the sweet potatoes from my parents, plus a pepper and red onion in the fridge and some broccoli I picked up and chopped a couple of chicken sausages into it too so that's lunches for me sorted for the rest of the week. Dinner tonight I have no idea as it's DH's fasting day so he sorts his own thing out. Hoping that inspiration will strike me!
As I was making dinner last night I found the last of the celery in the fridge leftover from the chicken stew I made last week so chopped that up and chucked it in the freezer ready for next time. Using up the LO roast beef chopped up to make a beef stroganoff for dinner tonight. It was a bit chewy so hoping cooking it a bit longer will be better!

Needed to use up veg and the leftover pizza sauce from the weekend. So tonight's dinner was roasted onion, parsnip, carrots, garlic, cauliflower and broccoli with pasta and the tomato sauce. Loads of roasted veg leftover to use with lunches/dinners later in the week (tbd).

We had sausage and mash last night, which is particularly lovely for me as DH is very good at this (cooks the potatoes with a veg stock cube in, giving them much more flavour), and used up some sad sweetheart cabbage and slightly wrinkled carrots. We had two sausages each, leaving one each to have for lunch today in a sausage and marmalade roll (highly recommended!)Save £12k in 2025 #2 I am at £4863.32 out of £6000 after May (81.05%)
OS Grocery Challenge in 2025 I am at £1286.68/£3000 or 42.89% of my annual spend so far
I also Reverse Meal Plan on that thread and grow much of our own premium price fruit and veg, joining in on the Grow your own thread

Wally thinking twice now about stuffed and roasted veg given the power our electric oven needs and the rest cost of fuel but microwaving them Doesn,t give the same nice crispy edged finish, does it.
perhaps we need a new thread for low energy cost meals but I can,t remember how to start a new thread!3 -
Trying to use up stuff in the fridge for lunch, so had garlic flatbreads made from the yogurt that is going out of date (rest in the freezer) and more coleslaw, followed by some chocolate ice cream that’s nearly finished up.
Still got lots of hm coleslaw (vinegar not mayo) and so considering stir frying it with some beans into a wrap for my next lunch. Other suggestions welcome! I could probably freeze it as well.2025 decluttering: 3,848🌟🥉🌟💐🏅🏅🌟🥈🏅🌟🏅💐💎🌟🏅🏆🌟🏅
