    Used up a couple of jacket potatoes for lunch today as they were beginning to sprout.  Making a cottage pie tonight using mince from the freezer; may well do a swede and carrot mash top as have half a swede and a few carrots in the fridge which need using up as well.  Will also cook some cabbage and green beans and peas from the freezer.

    Dinner was the rest of our Sunday roast chicken & veg along with braised red cabbage from the freezer and some cheesy mash.  We still have chicken left so that will be made into cheesy toasties for lunch tomorrow with a slow cooker soup. 

    Last few days of WFH before returning to the office again next week - and I've not planned lunches properly for the next week as we are still not sure what the work schedule will be.  May have to use up some B00ts points for meal deals & regroup for the following week!

    Well I got that wrong about dinner!  Cottage pie is tomorrow night, LOL!  Tonight it was some mini meatloaves with a tomato glaze which I made a few months ago and put in the freezer which I'd forgotten I'd got out to defrost which we had with mash, cabbage, green beans and peas.

    I picked up some green peppers and I've got an open pack of tofu so thinking I might do some kind of stir fry / salt and pepper tofu type recipe for dinner. 

    Lunch will be lentil soup which will use up some bendy celery and carrots and I'll use spring onions (of which I have a mountain!)

    Also picked up some coriander from Olio the other day which I will chop tonight and freeze in ice cube trays with a little water ready to chuck into any recipe.  I love frozen coriander, I'm rubbish at keeping plants alive and never use the fresh packs quick enough.

    I plan on doing all these little things once we’ve got the new fridge freezer up and running @CCW007 I just want everything on hand and things like this make it easier!

    Morning all.  Having beans on toast for lunch today as only used half a tin last night on jacket potatoes (DH decided he wanted tuna on his instead).  Dinner tonight is mushroom risotto to use up some of the mushrooms leftover from last week.  Started planning next weeks meals already and the shopping list is rather small so far and only 1 more meal to plan in 👍

  • Food took a more interesting turn when I got a Too Good To Go bag from C0st@ yesterday - it gave us each a cake for after tea last night, each a bacon bap for breakfast this morning, and I've got a panini for lunch, too. Possibly something we might look to do as a treat once a week, and I'll keep an eye on the app for anything else that might be useful for filling in/adding to our usual food purchasing. 

    Still need to get both that bacon and the pork sorted out so I'll deal with those tonight, and some of the pork is going straight to a stir fry I think as I've got veg box stuff to use. 

    Still need to have a proper think about what we're eating tomorrow, too. Goodness I HAVE to set some time aside for some proper planning over the weekend!

    I've also got bacon - I'm going for leek, bacon and cheese tart (maybe quiche) having seen someone else talking about that. It might be a tiny crumble of stilton as I defrosted some. I'm also going to make something including some braised little gem lettuces
