    My new veg box arrived yesterday, so new meals are being planned around its contents.  The only things left from the old one was 1/3 of a red cabbage which is now a coleslaw ready for burgers later (which will come with sweet potato chips and for me some pickled beetroot as I love the stuff) and 1/3 of a swede which will be roasted with the whole chicken for Sunday's dinner.
    We have a lot of curly kale this time, so will start with pesto pasta for lunch today with kale and peas.  Determined to have no waste again this time.

    Forgot that last night was earmarked for decorating so ended up being a quick dinner of pressure canned chilli (meat for OH and veggie) for me with rice and carrots.

    Can't decide between Shakshuka (to use up aubergine and peppers) or stir fry tofu to use up tofu.  Hmm, might have tofu scramble for breakfast tomorrow then I can have shakshuka tonight with LO rice from yesterday.

    Bought some peppers earlier in the week and was planning on stuffed peppers for Thursday but we were out and about so ended up eating out so we had those today for lunch.  Dinner tonight is an aubergine dhansak from the freezer, just need to cook some rice to go with it.

    An extra piece of chicken came out and was boiled last night after puppy was very sick. He was never going to go through the night with nothing after being sick three times after 9pm. So, I defrosted and boiled it for a simple, easily digested mini-meal. His main meals are 20g of dry mix so not much in reserve. He is better this morning.

    We had sandwiches for lunch and liver and bacon for supper - a real favourite here, the liver was from the half lamb we bought last year. Just four chops and some scrag left (the latter I will make a generic meat stock with).

  • Glad the pup is better today SL. 

    Veg box arrived unexpectedly early yesterday evening, it’s usually overnight so that was a nice surprise, and it’s handy to have a bit more thinking time of how to plan stuff in. 

    Last of the eggs and the bacon were used up yesterday in a combination of a bacon, cheese and egg toastie for me for lunch, and HM pizza for tea - that also shifted the pizza dough and the mozzarella from the freezer too. The freezer is still jam packed though after us ending up with half a dozen boxed up portions of that roast pork to squeeze in there. I need to factor in using one a week for a while, I think.

    We are eating prepared meals this next week or more. Rapidly becoming more and more averse to chicken thigh meat the more it’s eaten, however we did get supermarket meat rather than anything better quality so I may give it one more try before avoiding it altogether. 

    I love tofu and could easily replace chicken for that if needs be. Anyway. 

    Will still be lurking in here but not much to post for a little while.

    Today’s lunch was cheese on toast with the rest of a tin of beans for DS and the coleslaw left over from Friday for me and DH and curly kale. I also had some pickled beetroot as I love it! The remainder of the coleslaw will be used up for cheese and coleslaw wraps tomorrow lunchtime and with the smoked salmon and cream cheese bagels on Tuesday lunchtime.

    Dinner tonight is roast chicken with roast pots, hm Yorkshire puddings, the last 1/3 of the swede from the last veg box, carrots and cauliflower.

    Tomorrow we will be using leftover chicken from tonight to make chicken stir fry and noddles with cauliflower leaves, curly kale (that stuff never seems to end so it appears everyday in something!), carrots, frozen peppers, frozen sweetcorn and mushrooms. I’ve already prepared this for tomorrow to save me a job.

    I’m saving up the kale stems and cauliflower stalk for a chicken casserole next weekend. The veg and potato peelings are in the freezer ready for making some soup at some point!

    OH is visiting family today and will have fish and chips so won't need much for dinner.  I picked up some reduced veggie sausages but there is no room in the inside freezer so they are going in a sausage casserole which I'll have with the last of some cooked rice.

    Got loads of peppers to slice and freeze, find them really handy to chuck into a stir fry or slow cooker dish.  Fridge is starting to look a little clearer so hopefully I can do an inventory.  I know there's some halloumi in there which I don't have a plan for currently.

    The last of the veg soup is going to be had for lunch today by me but I expect DH to want a sandwich as he bought bread while out getting bacon. I have lamb leg steaks (I think that is what they are) ready defrosted for tonight. I think they will be with potatoes, slightly bendy carrots and cabbage or broccoli. I spotted a whole chicken in the chest freezer while rummaging for something else so roast is on the agenda too. I want to get through all the meat in the freezer this coming month so hopefully not too spendy, but enough to eat well.

    Hosted a book club meeting this weekend which always leaves me with leftover food that people bring with them.  This time it was mainly fruit and veg (because everyone's on a diet 🤣🙄) with a few treats here and there (DH hoovered up the tortilla chips on Sunday for breakfast!) 

    So had half a pot of mango with yogurt for breakfast and then the plan for lunches for the week is salad bowls to use up the various salad bits we had left over, plus some cooked meats, HM potato salad, hummus etc.  There's enough there for probably 4 lunches, maybe 5 depending on how hungry I am this week; DH will stick to his usual soup or sandwich for lunch.  

    Dinner tonight is a vegetable packed curry because I just fancied it, full of peppers, courgette, carrot, potato, onion and anything else I can find in the fridge.
