  • rtandon, our veg box has an option to ask for up to 3 veg items to not be included - kale is our bugbear - the worms have benefitted from the excess.

    It was so nice to just have a simple salad with pickles and cold pork from the tiny joint we had on Sunday (£3.51 for four really good portions!) - it felt like summer!

    Having mushroom risotto for dinner tonight as I have mushrooms to use in the fridge and I found a second opened box of arborio rice in the cupboard so need to make some space!  Also have some parmesan sitting about in the fridge that needs to go soon as well.

    Making mustard pork using pork fillet from freezer with green lentils using some up from the cupboard which have been there longer than I care to remember.  Will also make an aioli to go with it.

    @ruby_eskimo When I have parmesan I grate it and freeze it immediately (I have to because we always bring back a huge lump from an Italian market) - given it is 18 months since I was Italy I can vouch for it keeping really well in a good strong ziplock bag that tetrises (is that a verb?) into the fluid spaces in the freezer

    Thanks @Suffolk_lass never really thought about freezing cheese so might have to give it a go next time.  There's only a tiny bit left now so will probably go into some stuffed pasta shells later on in the week.

    Using up some potatoes with a good old jacket potato this evening.  No idea on toppings but might have tuna and cheese, and will of course have a large salad on the side.

    I freeze parmasan in a lump and just grate it as we need it as not keen on pre-grated.  Although I'll happily freeze grated cheddar as it doesn't seem to lose it's flavour.

    @joedenise - We also freeze pecorino (parmesan's poorer cousin) in a lump and grate from frozen, but always grate the moister cheeses first as they tend to crumble badly otherwise.

    @Mrs_Salad_Dodger - for the past 6 weeks our veg box came as a set choice, as we were buying from the local pub down the road - they seemed to take a liking to us and routinely doubled up the leeks, broccoli & cauliflower in our order!  Now that they have stopped doing deliveries in preparation for opening again after Easter,  we'll revert back to the organic place where it's easier to tailor the box & by comparison are quite stingy with everything other than potatoes and onions 😉

    ETA - dinner tonight used up the last of a green cabbage - I've got at least one left in the fridge if not two, must check when I do the fridge audit tomorrow!  There is also a massive cauliflower in there, so cauli cheese will feature in our future 😄

    We got a bit involved in doing stuff outside (bee-equipment maintenance) and there was the day, gone! so we had the pudding I had prepared (to use up some starting to crumble brioche buns) - "trifle" tin of peaches, juice added to an orange jelly and squidged round the brioche pieces then topped with custard (Birds!). Oh my, it was lovely! All we had time for before our online zoom forum (bees again!). After that neither were hungry but we had the sourdough rye bread DH had defrosted - just toasted with butter and jam or marmite. So simple but it did not help with the food mountain. I might do veg curry tonight. Been saying that for nearly a week now!

    Have a few mushrooms and a pak choi lingering in the fridge so will add some frozen peppers and noodles to the mix and make a chow mein inspired dish for dinner tonight.
