Today's food plans feature chocolate eggs and cake (has fresh cream in - needs eating!) and that's all that's been decided so far!Something more nutritious will need to feature - but I suspect the rest of the food will be easy and relatively light - we do have a freshly baked seeded wholemeal loaf - so am thinking ham/ cheese/ egg and salad sandwiches may be a plan... - or possibly some soup (have a tub of HM roasted tomato in the freezer)

Had about half the left over beef with a shared jacket potato and salad for a simple supper. There is enough left to have a good roll for lunch, probably tomorrow as I have soup I want used today. We will have sausage meat balls in with roasted veg again tonight as there is half a stick to use up. Or if DH wants to cook, maybe sausage and mash. Lots of yogurt so having some with frozen berries of a little honey as dessert

Food yesterday was simple after Sunday's excess...
Ecclescakes and coffee for breakfast...
...egg salad sandwiches for lunch...
...and we used up the last of the endless cauliflowers yesterday and had caulicheese for dinner with a portion for each of us in the fridge for lunch tomorrow.4 YEARS 10 MONTHS DEBT FREE!!! You're all making me wish we'd had a roast over the weekend, but had other things to use up so that was the priority rather than getting a joint in.
Lunch today (and for most of the week...) will be a large salad filled with lots of different odds and ends that are hanging around in the fridge. we had a breast of lamb that had been in the freezer for ages on sunday, with mash, roasted parsnips, carrots, brussels and broccoli. Yesterday I used up a number of items for tea - tomato & mascarpone pasta with ham & mozzerella.
The affordable grocery bags I collected yesterday included a large piece of topside of beef which is already cooked, so I'm going to slice thinly and freeze in portions so we can have it for sandwiches or heated with gravy for a sunday dinner. should get quite a few slices from it if I can cut it thinly enough. Minced beef & onion pies will feature on the menu this week too as they were included yesterday and need eating by the 9th.

Using up some of the LO roast beef from the weekend joint. Will have it with home made chips & baked beans. Tomorrow will have toad in the hole made with some sausages from the freezer which I've got out to defrost.

We are still working our way through the vegetable mountain here (some tired and fresh, some frozen and some in sacks that we grew and have over-wintered. Had roasted veg and discs of sausage-meat that used up a stick I had opened. Using up a bag of spinach and some of the feta cheese from the fridge to make spanakopita for dinner tonight. Have got out some chicken and butternut squash for dinner tomorrow.
The chicken will be marinaded in yoghurt and Indian spices overnight to make butter chicken for tomorrow night's dinner. The squash also goes into the curry for a bit of added sweetness without sugar.

Used up the stalk ends of asparagus from our Easter meal to make Asparagus Broth. Tomorrow will turn it into 'no cream' asparagus soup, by adding some cooked potatoes & whizzing it up.4 YEARS 10 MONTHS DEBT FREE!!! We too use up tougher asparagus stalk ends for soup, accumulating them in the freezer. When we grow peas we throw in the pea pods as well and whizz them all up together2
