I used half a stick of sausagement chopped into little rounds and roasted with various veg (mostly pumpkin) and had it with tinned baked beans and cabbage - yum!

Today is a full on roast leg of lamb 🐑etc for dinner - so no reverse planning there - however, the ensuing leftovers will end up featuring in this week's meals :D Also baking a lemon and raspberry Victoria type sponge 😋😋😋🍰 - not that we really need it with the amount of chocolate in the house.... 🍫🐣🐰....

Traditional roast shoulder of lamb for Easter Sunday lunch although it almost needed a second mortgage!  Still, every last scrap will be used and no doubt shepherds pie will feature at some point from the leftovers.  Even our visiting fox will have a tasty bone to gnaw as his Easter treat!

We have a rib of beef here - again, second mortgage considered. Off to make YP mix and let the lumps disperse for a few hours

Thanks @Suffolk_lass - just reminded me I need to make the batter mix too because we're having a piece of beef tonight for dinner.

Glad to know I'm not the only one who found the Easter joint to be quite dear!  OH asked for lamb as we always have either pork shoulder or chicken for our Sunday roast.  Leftovers will be frozen as slices and strips and then worked into lunches over the next few weeks. TBH it's the sides that make the meal for me rather than the meat - we'll be having ginger orange carrots, grilled asparagus and rosemary roasties.

Today's cooking adventure is to use up the rest of the aloo gobi tray bake (recipe off the beeb) to make Samosadillas - the spiced veg mix used as a generous filing in tortillas with a smidge of melty cheese.  Using the toastie maker to create no-fuss & no fry triangles that resemble take-away samosas.  The tortillas crisp up really nicely but without the deep fat frying, 3 of these have the same calories as 1 from the curry house!
How do you fold the tortilla to get triangles or do you double up?

@Mrs_Cheshire I just fold the tortilla's in half, they are the smaller size ones that say regular on the package. Each tortilla makes two triangles, with the curved edges sealed by the diagonal edges of the toastie maker iyswim

Well, it was planned, rather than reversed but the beef was fantastic - with roasted potatoes and sweet potatoes in duck fat, and simple steamed carrots, sweetheart cabbage and broccoli. The YP was done in the meat tray, under the beef on a tall rack and was just perfect. The middle bit was a bit soggy so went back into the cooling oven to crisp a bit, providing DH with a late night childhood favourite of cold YP with strawberry jam (!)

I used to love cold YP with syrup.  My dad always did Sunday dinner and always made extra YP so that we could have them cold in the evening.
