DH cooked for us last night, omitting to remember my Mum was going to call - she did so after two mouthfuls of sausage and mash. By the time I had answered and put her back it felt rather big and stodgy - potato and sweet potato mash was delicious but probably not needed on top of carrots, cabbage and three pork sausages!

I shall do something light this evening. Maybe stuffed peppers or roasted cauliflower

I made the second rescue-loaf of rye bread (rescue because my first double quantity loaf failed to rise at all so have had to make a fizzing starter and add some high protein strong wheat flour to improve the gluten strands and get it to a robust loaf with a decent rise). I suggested DH (who eats most of the bread) cut some and freeze it flat in slices. It looks as though he did that after setting the dishwasher going as all worktops are crummy and boards and knives all over this morning.

I used four bags of homegrown tomatoes to make some more home-made tomato sauce - four large screw-top kilner jars. I just need to fund somewhere to stash them now!

Using up a more freezer fodder today!  A fish pie with celeriac and butterbean mash.  Will have with some roasted butternut squash (from freezer), carrots & peppers plus the last piece of last week's cabbage which needs using up.  Using up the last mushrooms to make an omelette for lunch.

I know none  of us like to waste food but can anybody share /(confess!) to some really unlikely food leftovers or scraps that they have actually turned into  to be a reasonably edible meal?
I recall my mum doing some tasty things with stale bread and a few sultanas during the war.
Sounds like my granny's bread pudding recipe - stale bread soaked in water, then squeezed out and mixed with suet, fruit, sugar and an egg then baked.
Definitely not health food but solid comforting stodge (keeps well, too!)

Having to think of interesting ways to serve sausages still, as we've got tons to get through.
Oven-cook them then freeze them again -  they keep for ages, and can be used a few at a time in pasta dishes, jambalaya, pizza's - whatever you want, and you don't need to eat up the whole pack at once.

Today was a day of using up leftovers (a successful reverse planned day)...

Breakfast hot cross buns left from yesterday with cafetiere coffee...
Lunch egg & bacon on leftover brioche buns, followed up by a shared leftover burger from yesterday's dinner. (Does ketchup count as a vegetable?)...
Afternoon snack was a Christmas cheese truckle from the freezer with crackers...
Dinner leftover pork souvlaki & greek pitta bread - added on some healthy salad from our weekly veg delivery, lettuce/cucumber/tomato/shallots.

A unusually carb heavy day!  Bread at all three meals is not a regular occurance... better get a veg focused meal plan going for the week 😉 that includes the three heads of broccoli & 2 large cauliflower that have collected in the fridge!

Mmn, @Wraithlady, bread pudding! Going to have to get my recipe out as an Easter treat now...

We have Jacket potatoes with grated cheese and coleslaw, with a simple green salad. It was so nice.

I seem to have too much milk so I'm going to make an old-fashioned rice pudding - (2 heaped tablespoons of short grain rice, two level to rounded tablespoons of sugar, 2 pints of milk in a dish with butter rubbed round the sides, a pinch of salt, a grating of nutmeg and an hour and a half-2 hours in a low oven (ours is 250f), maybe 15 minutes in the baking oven (350f) to make sure it is brown) - don't serve it for half an hour after it comes out and it thickens. Great with stewed apple or on its own.

Morning all.  Last night we had leftover hot pot from the freezer with some broccoli.  Tonight is going to be a pork stir fry with pak choi I picked up yesterday and the last of the frozen peppers we have, plus some udon noodles from the cupboard.

Used up another of the never-ending magically multiplying broccoli 😁 to make a Broccoli, Feta & Walnut soup - definitely a success and surprisingly satisfying as a meal just on it's own, with the added bonus of using up some chicken bone broth from the freezer.

Lunch today will feature the last head of broccoli in our standby favorite Brocconut noodle and then I'll keep my fingers crossed that we don't see that particular cruciferous veg in our weekly box for a few weeks!
