When my kids were little they used to love sausage meat balls in a sweet and sour sauce - they actually preferred it to chopped up pork chops.
The other thing I used to do with it was Cowboy pie - sausage meat balls and baked beans in a pie. We still have something similar now but generally use chopped sausages as I don't tend to buy sausage meat now. I also add some veg to it as well and serve with some green veg.

@Frugalista - Sausagemeat is a great substitute for anything you'd use minced meat in. Cottage pie, meatballs, hamburgers, 'hamburger helper' (pasta with mince), kebabs on skewers - the only thing to remember is to taste before seasoning as it often has enough salt & pepper already in it!
Our reverse planned lunch today was the last of Sunday's roast pork with some on Monday's cauli-cheese. So tasty & no more effort than putting it on a plate and zapping in the microwave.
The fridge is slowly emptying just in time for a veg box delivery on Friday. We are even down to our last flat of eggs! The OH was also worried we'd not make to the next egg delivery - I may have been glaring when I pointed out that there are 3.5 dozen in the egg basket - more than enough even with his omelette for breakfast habit 😁😁😁4 YEARS 10 MONTHS DEBT FREE!!! @Frugalista we like a veg and bean stew topped with balls of sausage meat and scone mix (so a sort of cobbler) - we like sausagemeat when it has a sort of crust on it so this works well as a sort of stewSave £12k in 2025 #2 I am at £4863.32 out of £6000 after May (81.05%)

Using up some stuff from the freezer which has been in there a while! So making a paella for lunch with some raw prawns, scallops & a chicken thigh. The chicken hasn't been in there long but wanted more than just the seafood in it. The rest of the pack of thighs will be chopped up and made into Fakeaway KFC for dinner tomorrow night.
Have also taken out a home smoked bacon "chop" which we'll have with eggs, beans & chips.

More using up of extra dinner portions happened for our lunch today - OH polished off the rest of the cauli-cheese & I used leftover stew from last night as stuffing for toasties with a bit of xmas garlic cheese in there as well. The stew didn't really have enough sauce in the first place so this worked quite well
Tasty, warm & frugal lunches hit the spot on this cold spring day.

After our meat free month completed we sat down to a roast chicken dinner. It was so lovely. Less meat is fine - no meat felt a little like deprivation for us (and DH's snacking really increased). Hi all, some lovely meals have been had by you all. I love coming here for all the meal ideas. We've been using up lots of bits over the last few weeks from the freezer. Having to think of interesting ways to serve sausages still, as we've got tons to get through. I'm planning on doing a freezer inventory later in the hope I can find some hidden gems to mix things up a little.

Chicken pie last night, made with the carcass pickings and topped up with lots of frozen peas and sweetcorn. Made two but I'm going to freeze one. I added a tin of condensed celery soup that had just gone out of BBE date.Save £12k in 2025 #2 I am at £4863.32 out of £6000 after May (81.05%)

Got some chopped winter vegetables and butternut squash out, along with some cooked pearl barley. Will chuck it all in a casserole dish with some stock and cook on low for several hours for lunch today and tomorrow.
Dinner tonight will be a vegetable biryani made using a bag of HM spiced mixed vegetables from the freezer.

I had a HUGE supermarket delivery at the weekend, so the fridge is stuffed full of veg, and I make stock with the last pack of chicken wings so I have lots of that, plus the meat from the wings. I foresee a lot of soup-making (and freezing!) and chicken-based dishes this week...3
