Last night's dinner used up 2/3 or an enormous red pepper, 1/2 pack asparagus & a red onion which had decided to sprout - also the last of our dried spaghetti pasta. The star of the show though was some wild garlic, we used this recipe and served some reheated roast chicken alongside. A lovely refreshing spring dinner. It always feels virtuous to use up bits of this & that and turn it into a meal.
Tonight we will hopefully use up the last of the parsnips in our oft-repeated parsnip/potato tart with blue cheese. It's that point of spring where I'm just sooooo glad to see the back of root veg and am looking forward to spring green veg4 YEARS 10 MONTHS DEBT FREE!!! After a nice brunch yesterday we were not hungry for dinner, which means todays dinner is all prepared and ready. Dinner last night was a YS sticky toffee pudding and custard which was very tasty. Sometimes I think just having a substantial pudding is better than having a meal then a small pudding.3

@Mrs_Cheshire - Toad-in-hole is a favourite in our house. We also take sausages out of their skins and make meatballs out of them - a bit of effort, but once cooked in a pan or in the oven can be added to sauce for pasta or even put into a long sub roll with salad & cheese.4 YEARS 10 MONTHS DEBT FREE!!! I agree with Mrs SD about the HB sausages casserole but I will say I prefer their 'non' diet one to their diet version - which is probably why I'm on the dieters thread!
I make my own scotch eggs, taking them out of their skins to wrap around the egg, bake in the oven or use a air fryer if you have one

Going to use up the LO roast pork and make a sweet and sour sauce to go with it. Have got some fresh pineapple so will add that at the end just to warm through. Will serve it with some plain boiled rice.
Lunch is some !!!!!!-a-leekie soup from the freezer.

I bung sausages on top of a tray of chopped veg and put it in the oven so it all cooks together. Not sure that's a recipe... but it's nice3
