Its been a really busy week so I've not joined in much
On Monday I made an easy tomato sauce with pasta, I normally put some bacon in it but left it ut to see if MrPorridge even noticed, he didn't, so the bao=con is still available for tomorrows breakfast. Last night I defrosted some of my mountain of pork loin steaks, I found a packet of stir fry satay sauce so cut the pot up, threaded it on skewers, brushed well with the satay mixed with some extra chilli sauce. It worked very well. Tonight was Friday steak and chips, steak from a markdown haul in L8dl and chips from the bag of potatoes I bought in December still.

Wow - where did this week go? We've been using up bits of leftovers for much of this week's lunches and making our way through a mountain of vegetables from our local pub's grocery delivery with our dinners. Somehow we were sent 3 broccolis instead of one and 2 enormous cauliflowers instead of one! Also double the carrots, but they last forever so no worries there. The chicken they sent us was properly trimmed and trussed butcher style - may have to start ordering direct from their butcher once they stop doing deliveries and are open for meals in April. Tomorrow will be fridge audit and meal plan day, hopefully I won't find any surprises in there 😉4 YEARS 10 MONTHS DEBT FREE!!! Well we have saved lots this week as I reacted to my vacc jab and spent the rest of the week eating nothing. Back to normal today and catching up.
One sausage option is to bung bits of them in muffin tins painted with oil and after ten minutes in the oven to start them off, top with beaten egg and bake for another ten minutes to make little muffin-like snacks - works with bacon too. Great when you are too late for breakfast and there are some in the fridge!Save £12k in 2025 #2 I am at £4863.32 out of £6000 after May (81.05%)

Used about 1/3 of a large butternut squash last night to go with the veg pilau. Will be using another 1/3 today in a chickpea and butternut squash curry. The other 1/3 has been chopped and open frozen overnight and bagged up and into the freezer this morning.
I love the little mini muffins. They're great for using up bits and pieces of all sorts of veg as well.

I seem to have a glut of green peppers and leeks if anyone has any ideas...3

Stir fry together, possibly adding some slivers of chopped bacon then pour over some beaten egg and add grated cheese for a quick omelette?4

Green peppers are nice roasted and stuffed or just roasted and served as a side. Leeks au gratin (leeks in a cheese sauce), again a nice side dish.
I often make a leek and pearl barley soup which is also very nice.

Thanks for the ideas. I ended up layering the leeks and a green pepper with half a slightly soft yellow pepper and a handful of spinach, then sticking a lump of frozen haddock on top which I spread with dijon mustard. I'd greased the dish with butter, put a few blobs of butter on top of the veg, stuck the lid on and bunged it in the oven for 40 minutes. It's delicious
I might do it again sometime... There are still plenty of leeks and green peppers, and two more lumps of haddock in the freezer.

Have discovered two packs of sausagemeat in the back of the freezer - no idea how long its been there. Any ideas? Also have a large pack of mushrooms that need using up.
