Thank you to everyone who gave suggestions about how I could use up my lettuce. Lettuce soup making is my plan for tomorrow as I think this is probably my best bet to get my husband to eat any...he's not the biggest fan of lettuce (hence our backlog).

I bung sausages on top of a tray of chopped veg and put it in the oven so it all cooks together. Not sure that's a recipe... but it's nice :)
This is what I do too. It’s an easy sheet pan dinner. Try Googling “sausage sheet pan dinner recipes” or something along those lines.

If you use the term 'sheet pan' they won't be UK recipes. They might be 'one pan', 'roasting pan', 'baking sheet'. There are a series of books by Rukmini Iyer called 'The Roasting Tin' which are good for these.

The other UK description used is likely to be Sausage Tray Bake recipes (substitute whatever you're looking for, eg chicken).

Making a veg pilau with roasted butternut squash for dinner tonight using one of the squashes which I've had in a cupboard for a while now.  This will use some of the veg in the fridge. Will only use half of it today as it's quite big.  The other half I'll use to make a chickpea and squash curry for Saturday night dinner.

There will just be one more squash left in the cupboard to use up!

    Both sound absolutely delish 😋😋

Ended up not making the veg pilau tonight.  I left it too late to cook it as the roasted squash takes quite a long time so I ended up defrosting the fish pie with butterbean and celeriac topping which I'd got out for tomorrow night from the freezer so we had that with loads of green veg and little basmati/wild rice.  The fish pie didn't really freeze very well so won't make that mistake again - just cook what we'll eat for the one meal.

Hopefully we'll have the veg pilau tomorrow!

Going to cook the veg pilau with roasted butternut squash tonight instead.  Have taken some chicken livers and bacon out of the freezer and will make some pate to have for lunch with some crackers.

Cooked a big batch of goat curry yesterday but it's too spicy so have added some more tinned tomatoes and a chopped courgette to it and cooking it a bit more.  Will portion that up later and put into the freezer; hoping to get at least 6 portions out of it - originally I thought I might get 10 portions out of it as there looked to be masses but it's cooked down so much!

Afternoon all, will definitely added the HB sausage casserole to the meal plan.
I made spaghetti bolognase yesterday, ended up with leftovers which will be enough for the kids another day.
Need to do a freezer inventory as other than chicken breasts, sausages and prawns I'm not sure what else is in there.

Ended up with 8 portions in the end so not too bad but not as many as I would have liked to bring the price per portion down a bit.  Will be thinking very carefully what to do with the rest of the goat which is in the freezer as would really like to get a few more portions, so may well end up doing a stew as I can add loads of veg and beans to it to stretch it further.
