Just a tuna stir-fry for us. I sliced the tuna across the grain and marinated it in lemon juice, salt, pepper and chilli flakes before adding it to a pan of already steamed fridge veg and egg noodles. Lots of soy sauce, ginger, chilli and sweet chilli dipping sauce. DH enjoyed it more than me and had seconds, but that means there is not enough for tonight as well. It might be egg salad for me tonightSave £12k in 2025 #2 I am at £4863.32 out of £6000 after May (81.05%)

@Suffolk_lass - that sounds delish SL - I don't think we've ever cooked tuna ourselves but I do love it grilled or in sushi! Now you've got me craving a tinned tuna sandwich for breakfast! - lol - not a patch on fresh though!4 YEARS 10 MONTHS DEBT FREE!!! A YS chicken has emerged from the freezer today for roasting, along with some YS chipolatas which will be made into pigs in blankets and sausage-y stuffing balls and some bread sauce leftover from Xmas day
Will roast some of the 0li0 potatoes I got given in Jan (I didn't ask for them, got them with an extra with what I had asked for - 4 x 2.5kg bags.... - getting through them slowly!) and also roast some chantenay carrots which have been hanging around for several weeks and use some of the large amount of tenderstem broccoli also sitting in the fridge (I think some has a Jan date on!!) That will do - I'll keep it simple to make sure we use things and not create too many more leftovers!! I'll have a root around in the garage freezer to see if there are any Bramleys still in there for a crumble - I know I have plums and nectarines chopped and frozen in the kitchen one, just need some apples to give it some tartness

Primrose said:It,s always worth boiling extra potatoes to make spare mash. A combination of grated cheese, chopped ham or bacon, mushrooms & fried onions mixed together and fried as patties until crisp on both side always makes a tasty supper snack"You can't stop the waves, but you can learn to surf"

Made a really quick and simple turkey chilli on Saturday night, which gave me two portions for the freezer. Yesterday we had a roast chicken, and the leftovers are in the fridge ready to be turned into dinner on Wednesday night. Tonight we're having good old spaghetti bolognese which we haven't had for a while. The bolognese is left over from when I made lasagne a couple of weeks ago, so just need to reheat while the pasta is cooking - nice and simple. Will chuck some salad leaves on the side too for a bit of greenery.Emergency Fund - £8572.39 / £10,000 :: Mortgage OP 2025 - £LISA 24/25 - £3200 / £4000 :: NSD 2025 - 2 / 150 :: Books Read: 1 / 52 :: Decluttering - 4 / 1000Engaged 9th December 2010 :: Married 29th October 2015 :: Bought a House 13th January 20173

Found a cauliflower I forgot we had so had that with some broccoli under a cheese sauce with some panko breadcrumbs from an opened packet for supper. Opened what I think is the last bag of wonky berries from the SM to have with cream for a low sugar dessert.
The scales are smiling this morning. Three pounds less but not overall. After a most indulgent week the week before last as my weight-loss had stalled, all seems to have settled down and cutting out treats means weight reducing again. I am 1lb more than I was at my lowest this year. Hopefully that and a bit more will go now.
We remain on our meat-free month - about half way through. My big bag of Canadian (puy) lentils arrived so that will feature somewhere this week. Maybe just egg salad tonight as we have a our evening class startingSave £12k in 2025 #2 I am at £4863.32 out of £6000 after May (81.05%)

More freezer diving for dinner tonight - found the last lonely portion of some kind of chicken curry so will have that for dinner tonight and make some mushroom rice to go with it.Emergency Fund - £8572.39 / £10,000 :: Mortgage OP 2025 - £LISA 24/25 - £3200 / £4000 :: NSD 2025 - 2 / 150 :: Books Read: 1 / 52 :: Decluttering - 4 / 1000Engaged 9th December 2010 :: Married 29th October 2015 :: Bought a House 13th January 20173

Bubble & Squeak with some grated cheese today. Trying to clear the last of some curly kale & Cavalo Nero from veg patch for this year's sowing & planting. Do like it when it's fried in flat pancakes so it gets nice and crispy on both sides. Childhood memories of wartime austerity food!4

@ruby_eskimo - I love a good mystery freezer find - lol - I've discovered some roasted root veg leftover from a Sunday roast that will be turned into 'cream of' soup with some of the chicken bone broth made recently.
Yesterday's lunch (pre-grocery delivery) was a sticky beef fried rice recipe but made with the last of the pork loin steaks from the freezer cut into strips, a red onion and a giant green pepper from last week's veg box. Also used up the last of the frozen leftover rice.
Dinner last night was cauli-cheese with poached eggs. The OH snuck some lardons into the cauli-cheese which defeats the whole idea of meat-free Monday, but as I didn't do the cooking I can't really complain...
...and besides when was the last time anyone shied away from the addition of bacon to anything?🤣🤣🤣
Today's lunch is another stir-fry this time a Malaysian/Indonesian style noodle recipe with chicken & red-pepper - We'll be having this one a lot, as I ended up having to buy a whole kg of dried vegetables which are used in small quantities as seasoning.4 YEARS 10 MONTHS DEBT FREE!!! @rtandon27 I've had to start writing labels on everything going in there now after I couldn't for the life of me work out what was in one tub...turns out it was a leftover marinade when I made way too much for some steak, not the soup or bolognese I thought it might have been!
