    Got a Kg of goat out of the freezer a couple of days ago.  Once defrosted marindaded in tagine spices overnight and yesterday cooked a goat tagine.  We had one portion for dinner last night, which incidentally, was lovely.  Left it to go cold and portioned up this morning.  Two more 2 portion meals have gone into the freezer.  Another 2 portion meal is in the fridge which we'll probably have Friday night for dinner.

    Today I used up the last pack of chicken thighs and made Poulet au Vinegre - it's a low calorie chicken and creamy sauce dish which is a bit sharp.  That is also in the fridge for dinner tomorrow night.

    Tonight we had baked salmon fillet which I got out of the freezer this morning, with mini roast potatoes and green veg.

    Will get a mutton stew out of the freezer on Friday to have for dinner on Saturday night.

    Love having lots of HM ready meals in the freezer to make life easier.

    We have had three good meals from the small chicken but it has gone now. Last night with salad and a shared pizza (too much!)

    I have got a stick of sausagemeat out of the freezer and we will have road-kill toad in the hole (flattened s-m instead of sausages) and maybe a sprinkle of stuffing mix in the batter.

    I will also get a chilli going as I got 200g of mince out and a pack of YS diced beef. This will use the rest of last year's borlotti beans from the garden (instead of kidney beans) and might feature leek scapes as last year's are going for it now

    I made a sort of chicken supreme last night which used up a punnet of sad mushrooms and some YS chicken breasts and 2 blocks of stock from the freezer :) Was very tasty - sadly there were no leftovers as a result! Also used up some previously cooked -and -then-frozen rice :)

    The last of Sunday's roast chicken will be used in sandwiches for lunch today. I think dinner plans may be steak for those who like it and hunters chicken for those who don't!

    We also had baked salmon, mini potatoes & green veg last night.  Groceries arrived and I somehow scored a whole side of salmon at 1/2 price!  more than 1/2 left over so OH will put some in his breakfast omelette, and the rest will be flaked and added to either pasta or rice for lunch.  It has been soooooo long since we had fresh fish, that it was pure decadence!

    We are back to weekly groceries now that they have reinstituted a grocery pass, so for two weeks have had a bit more variety in our meals with last minute flash deals that are offered.  I made a conscious decision that anything in a flash deal has to be eaten fresh and not stored, so that it won't be added to the freezer or store-cupboard and keep me from going 'bargain' mad!😉

    Must be something in the water as I had salmon last night too 😆

    Tonight we're having bolognese stuffed peppers, using some leftover mince from the freezer and some peppers I picked up at the weekend.

    This past week, we've been trying to use up things from the store cupboard!  Doing well in that we used up the last of the vegetable suet, the last of the white wine vinegar and the last two tins of pineapple.  The one thing I'd like to replace is the tinned pineapple, but there seems to be a pineapple shortage?!

    We are half-way through a small lamb joint and have half the stick of sausagement left - the latter will be eaten tonight with DH's mash - he cooks the potatoes in water with a veg stock pot added and they are very tasty

    Have taken an odd chicken breast from the freezer and am going to make chicken chasseur with mustard mash.  Going to try cooking the potatoes in stock like your DH @Suffolk_lass.  I'm sure it will make the potatoes taste even better!

    Never thought to cook potatoes in stock so may have to give that a go too.  Having the last of the salmon fillets for dinner tonight with some more broccoli and green beans. Have quite a well stocked freezer at the moment so will try and meal plan around that for next week.

    A success for the upcoming week!  The meal plan for next week has been mapped out and 6 of 7 dinners will be from the freezer/stores.

    Our one non-stores meal will be fresh salmon mid-week when the groceries arrive.  Just a small shop of things we use fresh every week - fruit, eggs, fresh herbs, salad greens, a bottle of red wine for the OH & mini magnums for me 😉 

    Strangely, I'm finding it so much easier to use things up now that we are not doing a monthly on-line shop and have eased into small weekly top-ups.  It does of course help that not one yellow sticker has entered the house in over a year!🤣🤣🤣
