    We're using a YS chicken, 2 tins of tomatoes from my mountain (mainly bought pre-C0vid and only added to by Sainz paying me (in giving more nectar pointsvalue  than can cost) to buy some cans a few months back....) and veggies already in to make a tomato pot roast - to be served with rice (leftover and frozen) and 0li0 petit pains from several weeks ago :)  Should probably end up with some leftovers to make an easy meal for one or 2 people another time too... :)

    We had leftovers night last night - about a third of the macaroni cheese that I put together after our bees swarmed on Friday (rolls eyes!) and we were in a rain shower getting ready to take them to our friend's farm. 

    Also just under half of the poor man's moussaka/melanzane parmigiana I made with added sliced potato (roasted with the aubergines), my own tomato sauce, the rest of the small leg of lamb diced and sprinkled in the middle layer, and a good strong cheddar instead of parmesan sprinkled over. I will def look to make that again. It means we have a chicken (YS) I have defrosted, waiting for today. A good old-fashioned roast. I might see if DS wants some in the garden (or the greenhouse)

    At last!! I've caught up!  We done a food shop today, not much meat as we have a lot in both freezers. So this next month will be 'using up what we have'  I remember once we had some leeks in cheese sauce left over. We made it in to a smoked haddock bake. Layer of fish, cheese sauce with leeks and then sliced potato on top and in the oven for about 45 to 50 mins. It was lush, sometimes a few left over mushrooms get added or anything else in the fridge. I love all your meal ideas and have written down loads. Thanks

    Seem to have loads of different mushrooms left in the fridge so going to make a mushroom stroganoff for dinner tonight.  Will serve with a basmati and wild rice mix.  Going to be a bit of a mushroom overload today though as we've also got stuffed mushrooms for lunch but will stuff with couscous with veggie bits stirred through rather than with rice.

    @JIL - that A&C recipe is one of our favorites! - The extra portions also freeze well & reheat in the microwave straight from frozen.

    Last night's dinner was box fish from the freezer, homemade wedges and a cucumber/tomato salad on the side.  Another small win in the self-imposed eat the stores challenge for this week!

    Lunch today is some leftover black bean curry from the weekend and dinner is homemade kebabs using mince from the freezer and some salad bits from the fridge.

    Hmmm ...  Help needed please :)   Very much trying to eat WHAT i have! 

    I have 1 aubergine that's looking abit sad some spinach and some ricotta cheese... i'm thinking some form of pasta bake with some tinned toms?     

    I've also got a jar of roasted grilled peppers and sundried tomato's that i have no idea what to do with? could these go in? I've never used them honestly i don't even know how i own them.  im sure i had plan, when i bought them,  but now they are just sitting there laughing at me.

    Only issue with this is my boys are very meat focused I could stick a packet of beef mince into it but i can really only make one bake and i NEVER make just on meal from a pk of mince,  if I use half for the pasta bake i need an idea for the other half? 

    I'm thinking perhaps a keema curry? i've got 1/2 a head of cauli i can rice to stick in it, pad it out a bit maybe some green lentils and some peas but this means cooking 2 different meals in one day... and that's quite annoying or should i just pad the pasta bake up and make two, i only have 1 aubergine but maybe if i chopped it up fine it would be ok?  
    Or i could scrap the pasta bake, just make the keema... but then i'd need another idea for the ricotta? 

    Hmmmm i think i'm over thinking it now haha.

    I tend to make spinach and ricotta cannelloni if I've got ricotta which needs using up or just make it into a pasta bake which is probably easier as it's a real faff to get the mix into the pasta tubes (I use a disposable icing bag!).

    I find aubergine to be quite "meaty" when cooked into a curry - how about this one from BBC https://www.bbcgoodfood.com/recipes/west-indian-spiced-aubergine-curry
