@ruby_eskimo - I'm amazed about your homemade kimchi!  I have recently discovered two unopened jars in the storecupboard!  I'm sure it's only useable in Kimchi-jjigae soup, but I've never made it before so on the lookout for an easy to follow recipe!
It's super easy if you have the right ingredients.  The easiest recipe I've found is the Roy Choi recipe which was on Basics with Babish a while ago.  There are lots of places to get Gochugaru online and everything else should be available at your local supermarket.  If you want the true kimchi experience then you should follow Maangchi's recipe but it's difficult to get the right rice flour that's not in a massive industrial sized bag!  Aaron and Claire also have a fairly easy to follow recipe too if you can't get hold of chinese leaf / napa cabbage and are using other types of cabbage.

Far less adventurous over here - I brought in a Christmas panetone (!), a pack of lamb chops, a tub of ice cream and a loaf of bread from the mysteries of the garage freezer. I was looking for butter but found only unsalted.

I made a pasta sauce and added the leeks I pulled on Friday that were left over and the rest of a bag of red lentils that annoyingly did not fit in the jar - we had it too late after DH finished disassembling our old greenhouse (I cleared up the broken glass) after it set off towards the field in the wind. We did not eat until about 8.30pm which is really too late for me as I normally like to go to bed early. I was "forced" to watch my team win a significant victory on MOTD

DH bought a pork joint which he though was loin to cure and smoke as bacon.  On getting out of the freezer I noticed the lable said LEG, so no good for bacon.  It's a big joint for just the 2 of us so today it will be roasted for dinner.  Some of it will be cubed and I'll make a sweet and sour sauce to stir it through and we'll have that probably on Tuesday (we have a meat free Monday most weeks).  I will also slice some and freeze in gravy for a mid week roast at some time - there may well be enough to do a couple of packs for the freezer but will see once it's cooked!

Using up the beansprouts, courgette, carrot and mushrooms from Friday's dinner with a chicken breast from the freezer in a stir fry / chop suey dish for lunch today.  Dinner is going to be carbonara using up some of the parmesan and bacon we have in the fridge too.

Yesterday we 'used up' 2 chicken breasts, 1/2 chorizo ring, a pack of grated cheese, a tin of chopped tomatoes and 1/2 pack of fusilli to make a Spanish style oven baked pasta.  Everything was from the freezer or store cupboard which felt amazing at the time.  We however now have six portions left & will be eating it for lunches for the next few days.  Trying really hard not to restock the freezer with extra portions, so OH might have to set his dislike of leftovers & repeat meals to one side for the week.🤣

Well the roasted pork joint has been portioned for the freezer!  Two packs of slices which we can use either for sandwiches or as a mid week roast, will reheat in gravy if we have it as a mid week roast.  There are also a lot of cubes so will make a double portion of sweet and sour sauce and we'll have one lot for dinner tomorrow night and the other lot can go in the freezer for another meal, probably next month.

Soaked the last of a bag of dried chickpeas overnight and have pressure cooked them this morning.  Will use about 2/3 of them to make chana masala for dinner tomorrow night.  There should also be a couple of portions for the freezer.

The other 1/3 will be made into hummus to use as a dip or spread on crackers.

So easy to make the equivalent of a couple of tins into several portions of other things.

🤣🤣🤣 We are still working on ours, 3 portions left!  I use the term 'we' liberally as OH refuses to eat anymore, so it's been on my plate for dinner last night & lunch today.  He's preferred to have a bowl of porridge and an omelette wrap!
