Well the roasted pork joint has been portioned for the freezer!  Two packs of slices which we can use either for sandwiches or as a mid week roast, will reheat in gravy if we have it as a mid week roast.  There are also a lot of cubes so will make a double portion of sweet and sour sauce and we'll have one lot for dinner tomorrow night and the other lot can go in the freezer for another meal, probably next month.

There wasn't quite as much meat cubes as I thought so had dinner tonight.  There was a bit of LO sauce but not enough for another meal unfortunately so that got binned.  I hated wasting it but not enough to do anything with.

We had the last of the everlasting pasta bake last night...
🤣🤣🤣 We are still working on ours, 3 portions left!  I use the term 'we' liberally as OH refuses to eat anymore, so it's been on my plate for dinner last night & lunch today.  He's preferred to have a bowl of porridge and an omelette wrap!
Yes, it was only 250g of mince but it did three, or maybe 4 main meals. We have lamb chops for tomorrow and something (macaroni, leeks or cauliflower au gratin tonight)

Turned some of the cooked chickpeas into Chana Masala, 2 portions in the fridge for dinner tonight and 2 portions into the freezer for another day.

Also made some hummus which is in the fridge ready to use as a dip or spread.

I use take away boxes (the small rectangular ones) and they are almost identical size to a tin - then I have a small stack in one of the freezer drawers for when I am ready!

Oh yes, it is the day to turn the electric range off until October! A glass of something summery like provencal rose, I think!

Had to reread that @Suffolk_lass to realise you meant that the takeaway boxes hold the same amount as a tin!  Problem is we don't do takeaways and I've only got one which my DD1 gave me!  Think I might have to invest in some - assume somewhere like the Land of £ would sell them?  Would be much easier to cook a bagful of dried at a time and then divide between boxes to store in the freezer.

I reuse a few freezer bags for my cooked chickpea and black bean portions and chuck them in the same drawer in the freezer - makes it easier to store than a box.

Using some pork mince from the freezer in a rice bowl tonight with an aubergine, peppers and onions.  Should be quick and easy for a midweek meal when I can't be bothered 😆

I asked a few friends and they offer them to me when they get a stack. We actually had 2 takeaways this year so I am 8 boxes up!

@ruby_eskimo - I know they take up a bit more space but DH throws a hissy fit if I ask him to retrieve things in plastic bags - he lifts one out and gets the stairs-slinky thing

Lucky you! I've put the Rayburn back on! ...and can only dream of reaching Provencal rose temperatures here in the North of Scotland!

MrS sells some that are slightly sturdier than the takeaway ones.  Our original 2 packs have lasted for about 6 years & we just bought another pack to replace them.  They have been used at least 100 times each and wash up really well in the dishwasher.

I have brought from both Wilkos and £ shop I can't remember how much they were in Wilkos but they have lasted longer I found the £ land ones got brittle after a while especially the lids
