We are still using up salad from our Saturday BBQ where our friends brought their motorhomes and parked up on the drive for the night, all in self contained accommodation. We have three large sausages and three homemade burger sliders left too (having grilled the chicken pieces that were marinadedSave £12k in 2025 #2 I am at £4863.32 out of £6000 after May (81.05%)

Using leftover beef from the roast at the weekend with some asparagus and a fried egg for lunch today. It,s fascinating to see the different food combinations people use for using up leftovers.
As it,s all combined anyway once it,s been eaten it should perhaps encourage us to be more imaginative. I think people are sometimes too rigid about not combining foods, for example, which are traditionally eaten at breakfast, like fried eggs, with an item like beef, which is more of a main meal food.
I often combine snack foods like dried fruit (sultanas, peanuts, cashews, dried apricots etc). with fresh chopped fruit like apples , pears etc in traditional salad bowls to liven them up a little and provide more different textures. This works well in packed lunch boxes too where you can get your main meal and dessert combined in the same serving !2 -
Had a load of chopped roasted veg leftover from dinner last night so reheated that with some sausages from the freezer for lunch today. Very nice it was too.
We're having a mutton casserole for dinner tonight, again from the freezer. Will just make some mash to go with it. Need to have another look in the freezer to see what we can have for dinner tomorrow!

We have courgette soup for lunch and some sort of chicken for supper as I took four thighs out of the freezer. We have now finished the leftovers from Saturday's little BBQ for five - except 4 sliders are in the freezer for another day. I got out a goat tagine for dinner last night but as we ended up eating out yesterday lunchtime we had our lunchtime meal in the evening so tonight will be the goat tagine. Will do some herby couscous to go with it.3

Just finished off the last of the orzo chicken/sausage one pot meal we made on Sunday - the recipe said 6 servings, but it was definitely a generous 8! Tonight we will have a pork and veggie stir-fry with soba noodles - completely off plan, but need to use up some ready cut veggies which I can't eat raw due to dental surgery yesterday! That was a bit of bad planning on my part, as the only thing that got consumed yesterday was some really soft bread & a bowl of soup!4 YEARS 10 MONTHS DEBT FREE!!! (24 OCT 2016)(With heartfelt thanks to those who have gone before us & their indubitable generosity.)...and now I have a mortgage! 'Dirty' burgers here tonight to use some of the excess pulled pork made on Saturday with a huge YS joint which had been in the freezer for a while. Will also use up some becoming-tired salad veg and OOD corn on the cobs
Lunches used up some leftover chicken pot roast from Sunday and some flatbreads (made to go with lamb koftas 2 days ago) and leftover peri peri chicken from the freezer from about a month ago
Breakfasts have been mainly toast to try and use up odds and ends of loaves from the freezer

My plans for lunch went completely astray today! I was going to make a mixed veg soup using frozen mixed veg but there just wasn't enough of it left so I've cooked what mixed veg there was and whizzed it up and used it like a stock for a 2 pea soup using dried peas and frozen peas based on a recipe which I found on MSE many years ago - who remembers the thread Mortgage Free in 3? Can't remember the ladies name now but she had a lot of cheap recipes on her thread. She also had a blog but that isn't available any more.
There's definitely enough now for DH and I and possibly even enough to freeze a portion but not sure as DH isn't in yet so don't know how hungry he'll be after playing golf this morning! I'm sure he'll be glad of something warming when he does get home.

We were both busy yesterday, out with others and much in need of hot showers when we got home having got cold and wet. A quick microwave warming up of the left over pasta shells I did for Saturday (a Eurovision tradition) went down well with grated cheese. I have freezer meat again today - probably lamb chops with baked potatoes and winter veg.
