Bit of a different UU today - using some pak choi from the garden with some diced beef and broccoli in a stir fry with some rice on the side. Have taken some spiced veg from freezer and will be making one of our favourite veggie meals - vegetable biryani.

@ruby_eskimo - well impressed that you are already harvesting veg! I've only just put out the few seedlings that we started, as it's been well to cold for anything to grow properly. The potato grow-bags are only 1/2 as big as they should be at the end of May, so our early new potatoes will be ready by mid-summer!
Our reverse plan for today was haddock in a mixed mushroom sauce with potatoes and purple spouting broccoli. All the veg from the weekly box, fish fillets from the freezer and some dried mushrooms from the store cupboard added in with the fresh ones for a bit of punch.
We are doing well with our self-inflicted challenge of clearing out the freezer, at least one item every day. We hope/plan to move sometime over the next two months, and I'd like to move the freezer empty, rather than having to worry about food thawing out in the picnic cooler box during the move!4 YEARS 10 MONTHS DEBT FREE!!! Tonight hubby had left over Chinese from Saturday, S & J had another roast dinner from yesterday's chicken. I had the hickey from yesterday with salad and fried rice from Saturdays Chinese. S & J had Angel delight that was just about in date. All meals this week will be odds and ends from our fridge/freezer. Then I can clean it out!! Can you use quorn if out of date?? Got loads of it here from when step daughter lived at home XMortgage free September 2021. Narrowboat brought October 2021

@rtandon27 DH was super keen with his veg this year - some of it definitely hasn't survived the cold snaps we've been having but the pak choi is doing really well. Transplanted some more seedlings out so should be ready in about 6-8 weeks. Our potatoes are going a bit crazy but no flowers, so should be a while yet before they're good to go. Don't even get me started on the courgette plants, I think they're going to be knocking on the doors to come in soon!
@Pixiehouse55 not sure about the Quorn, maybe cook a small test amount and see what it's like?
Made a massive batch of mexican quinoa for lunches for the rest of the week and it allowed me to use up a few tins and packets that were just languishing in the cupboard. Going to have it with some tuna steaks from the freezer. Making a cottage pie tonight using some beef mince and mixed veg from the freezer. Will also use up some of the potatoes which are getting to the sprouts stage! Will serve with some frozen green veg too.

Lunch today was made up from the stores & freezer - quite delicious! Pan-fried gyoza on a bed of soba noodles with tsuyu sauce. OH refused to eat cold noodles so I gave in and let him microwave his share. Who eats warm soba noodles? It's akin to putting ketchup on your scotch egg! 🤣🤣🤣4 YEARS 10 MONTHS DEBT FREE!!! Bees taking up more time than we anticipated. Might have to have a think. Made a tomato and onion pie (to try something with no cow products ahead of the lunch I am delivering next week where one of the people has a cow allergy).Save £12k in 2025 #2 I am at £4863.32 out of £6000 after May (81.05%)
OS Grocery Challenge in 2025 I am at £1286.68/£3000 or 42.89% of my annual spend so far

Another freezer dive for lunch today...Split pea soup made several months ago... along with some cheese and red onion toasties. Used up a pack of smoked salmon which we had stirred through a white sauce and mixed with tagliatelle with a couple of balls of frozen spinach - quite tasty for a five minute supper but it needed a sieve rather than a colander to strain the flecks of spinach!Save £12k in 2025 #2 I am at £4863.32 out of £6000 after May (81.05%)
